- 1 pound scrod
- 1/2 onion, minced
- 1 garlic, chopped
- 16 ounce. can Italian plum tomatoes
- 1/2 teaspoon each salt, pepper">pepper, red pepper">pepper flakes, fresh basil, parsley
- 1 sm. celery stalk with leaves
- 10 to 12 slices sicilian green olives

- Saute/fry onion in oil or possibly low calorie butter. Add in garlic. Chop tomatoes. Add in all spices and celery leaves along with sliced sicilian olives. Simmer 20 min, covered. Add in scrod. Cook uncovered for 25 to 30 min.
