- Preheat the broiler.
- Place the scampi in an oven-proof saute/fry pan, drizzle them with 1/4 c. of the extra virgin olive oil, distribute the garlic slices proportionately over and around them, and cook under the broiler till cooked through, about 5 min.
- Remove from the broiler, add in the white wine, and top with the bread crumbs. Return to the broiler and cook till the bread crumbs are darkening, about 4 min, then remove the scampi to a plate.
- Add in the herbs and remaining extra virgin olive oil to the pan and swirl over high heat 1 minute. Pour the sauce over the scampi and serve immediately.
- This recipe yields 4 servings.
