- In large frying pan over medium high heat, heat 2 tbsp butter. Pat scallops dry on paper towels. Cook scallops in hot butter till opaque and golden brown. Remove scallops to platter; keep warm. Add in remaining 1 tbsp butter to frying pan. Add in garlic. Cook 1 minute. Add in tomatoes, basil, salt, and pepper. Cook till tomatoes render their juices, about 3 to 5 min. Return scallops to frying pan; add in scallions; heat thoroughly. Makes 5 servings. Total preparation time: 15 min.
