  • 2 Tbsp. very good extra virgin olive oil - (to 3 tbspns)
  • 3 x garlic cloves crushed
  • 1 x dry red pepper in small pcs
  •     Minced Italian parsley
  • 4 x plum tomatoes - (to 5) diced
  • 1/2 x glass white wine
  •     Salt to taste
  •     Freshly-grnd black pepper - to taste
  • 3/4 lb spaghetti
  • 1 can tuna (preferably packed in oil) 6-ounce.

  1. Boil salted water for the spaghetti. In a medium pan, heat extra virgin olive oil and brown garlic cloves. Add in dry red pepper and cook 30 seconds. Add in a fistful of minced Italian parsley and cook 1 minute. Add in tomatoes, white wine and salt and pepper. Cover and cook at medium heat.
  2. Meanwhile, cook spaghetti for 7 to 8 min. Time it carefully; with 5 min to go, add in tuna to the marinara sauce. Stir briefly and cover.
  3. Drain pasta, transfer to big bowl and mix tuna marinara with pasta. Serve immediately. Utterly delicious, fresh and quick.
