  • 1/4 c. Unsalted butter softened
  • 6 slc Whole-wheat bread
  • 1/2 tsp Dry sage
  • 8 x Scallions diced
  • 1 c. Minced pecans
  • 1/2 tsp Salt
  • 1/4 tsp Freshly-grnd black pepper
  • 4 c. Lowfat milk
  • 4 x Large eggs
  •     Rich Mushroom Gravy see * Note

  1. Preheat the oven to 350 degrees. Spray a 2-qt casserole dish with non-stick cooking spray.
  2. Butter the bread slices and cut into cubes. (You should have 4 c. bread cubes.) Place the cubes in the prepared dish and mix with the sage, scallions, pecans, salt, and pepper. In a small bowl, beat the lowfat milk and Large eggs together lightly. Pour the egg mix over the bread cubes. Let soak for 20 min.
  3. Bake for 45 min or possibly till the pudding is hard when the dish is gently shaken. Serve immediately.
  4. This recipe yields 6 servings.
  5. Comments: This creamy pudding with a crispy crust is a wonderful holiday entree. Serve it with Rich Mushroom Gravy and it takes center stage for a traditional holiday dinner.
