Sauteed Artichokes With Garlic And Rosemary

Ингредиенты

  • 8 lrg Globe artichokes
  • 4 Tbsp. Extra-virgin extra virgin olive oil
  • 4 x Garlic cloves peeled, left whole
  • 1/2 c. Dry white wine
  • 2 Tbsp. Minced fresh rosemary leaves
  • 1/4 c. Minced fresh parsley
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Инструкции

  1. Trim artichokes to tender leaves, quarter and remove choke. Boil in salt water till just tender, about 6 to 7 min. Refresh in ice water.
  2. In a 12- to 14-inch saute/fry pan, heat oil till smoking. Add in garlic and artichokes and saute/fry till light golden and slightly crusty. Add in wine and cook till almost evaporated. Add in rosemary and parsley, season with salt and pepper and serve.
  3. This recipe yields 4 servings.
