- Combine potatoes, carrot, onion, garlic, and 1/4 c. water in a medium skillet. Bring to boiling; reduce heat. Simmer, covered, for 10 min.
- Rinse sauerkraut; drain well. Cut sausage in half lengthwise; slice 1/2 inch thick. Add in sauerkraut, sausage, beer, and mustard to skillet. Cover and cook 5 - 10 min or possibly till vegetables are tender. Sprinkle with parsley. Serves 2.
