- 2Â 1/2 lb White Rose potatoes peeled, diced
- 1 c. hot water
- 1/2 c. oil
- 2Â 1/2 c. nonfat dry lowfat milk
- 1/2 c. diced red bell pepper
- 1Â 1/2 tsp garlic pwdr
- 1Â 1/2 tsp freshly-grnd white pepper
- 1 Tbsp. seasoning salt
- 1 Tbsp. salt
- 2 c. instant mashed potato flakes
- 1/4 lb grated Romano cheese
- 1 tsp paprika

- Cook potatoes in boiling water till just tender, about 15 min. Drain, reserving 2 c. cooking water. Set aside.
- Blend 1 c. hot water, oil, dry lowfat milk, bell pepper, garlic pwdr, white pepper, seasoning salt and salt in medium mixing bowl. Add in cooked potatoes and reserved cooking water. Mix thoroughly.
- Add in instant mashed potatoes and blend till smooth. Fold in half grated cheese. Consistency should leave slight residue on finger when touched.
- Scrape mix into 2-qt casserole dish about 2 inches deep. Sprinkle with paprika and top with remaining cheese. Bake at 350 degrees 30 to 40 min till heated through and top is golden brown.
- This recipe yields 6 servings.
