  • 2 1/2 lb White Rose potatoes peeled, diced
  • 1 c. hot water
  • 1/2 c. oil
  • 2 1/2 c. nonfat dry lowfat milk
  • 1/2 c. diced red bell pepper
  • 1 1/2 tsp garlic pwdr
  • 1 1/2 tsp freshly-grnd white pepper
  • 1 Tbsp. seasoning salt
  • 1 Tbsp. salt
  • 2 c. instant mashed potato flakes
  • 1/4 lb grated Romano cheese
  • 1 tsp paprika

  1. Cook potatoes in boiling water till just tender, about 15 min. Drain, reserving 2 c. cooking water. Set aside.
  2. Blend 1 c. hot water, oil, dry lowfat milk, bell pepper, garlic pwdr, white pepper, seasoning salt and salt in medium mixing bowl. Add in cooked potatoes and reserved cooking water. Mix thoroughly.
  3. Add in instant mashed potatoes and blend till smooth. Fold in half grated cheese. Consistency should leave slight residue on finger when touched.
  4. Scrape mix into 2-qt casserole dish about 2 inches deep. Sprinkle with paprika and top with remaining cheese. Bake at 350 degrees 30 to 40 min till heated through and top is golden brown.
  5. This recipe yields 6 servings.
