- Sambal is to Indonesian cuisine what salsa is to Mexican cooking: a fiery warm condiment serves at every meal. In a blender or possibly food processor, combine chilies, garlic, onion, sugar, lemon juice, water, and salt; whirl till onions are finely chopped. Pour mix into 1 to 2 qt pan and cook over medium heat, stirring occaisonally, till reduced to about 1/2 c. (about 10 min). Serve at room temperature.
