- Shortbread:
- 10 tablespoons unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 egg yolk
- 1 2/3 cups all-purpose flour
- Caramel Topping:
- 1/2 cup butter
- 1/2 cup packed light brown sugar
- 6 tablespoons light corn syrup
- 1 teaspoon salt
- 2 tablespoons granulated sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon vanilla extract

%20so%20no%20rest%20for%20the%20weary,%20that%20would%20be%20me.%20%20And%20here's%20one%20more%20piece%20of%20bad%20news%20-%20brace%20yourselves,%20it's%20a%20biggie...my%20plastic%20Frosty%20The%20Snowman%20who%20I%20proudly%20display%20in%20my%20front%20yard%20each%20Christmas%20season,%20along%20with%20Mrs.%20Frosty%20and%20Baby%20Frosty,%20has%20died.%20%20No%20amount%20of%20new%20light%20bulbs%20have%20been%20able%20to%20resuscitate%20him...so%20while%20Mrs.%20Frosty%20and%20Baby%20Frosty%20glow%20brightly%20in%20the%20dark%20of%20night,%20Frosty%20himself%20sits%20-%20unlit%20-%20frozen%20-%20not%20casting%20even%20a%20scintilla%20of%20a%20shadow%20on%20the%20smallest%20piece%20of%20grass.%20%20Fortunately%20I%20had%20some%20of%20these%20delightfully%20delicious%20treats%20to%20soothe%20my%20soul...%3C/p%3E%3Cp%3ERich%20shortbread%20topped%20with%20a%20creamy,%20smooth%20and%20slightly%20chewy%20caramel...sprinkled%20with%20a%20bit%20of%20sea%20salt%20for%20a%20surprising%20savory%20taste...you're%20going%20to%20love%20these!%20%20But,%20let%20me%20caution%20you%20on%20the%20caramel...don't%20leave%20the%20stove%20while%20making%20it....as%20soon%20as%20it%20begins%20to%20boil,%20stir%20like%20crazy%20and%20stay%20stirring%20for%205%20minutes.%20%20Not%206%20minutes%20or%20even%205%201/2...if%20you%20leave%20it%20on%20the%20stove%20too%20long%20you'll%20end%20up%20with%20a%20beautiful%20looking%20bar%20that%20is%20covered%20in%20hard-unable-to-cut-chew-enjoy-caramel-toffee.%20%20Timing%20is%20everything%20on%20this%20one!%3C/p%3E%3Cp%3ENotice%20how%20my%20caramel%20is%20just%20a%20bit%20droopy...although%20it%20stays%20on%20the%20bar...it%20probably%20could%20have%20used%20another%2030%20seconds%20on%20the%20stove...but%20I've%20already%20forgiven%20myself%20for%20jumping%20the%20gun%20at%204%20minutes%20and%2030%20seconds...because%20these%20were%20SO%20good...5%20dangs...coma%20worthy.%3C/p%3E%3Cp%3EMake%20shortbread:%20%20Preheat%20oven%20to%20350%20degrees.%20%20Line%20a%209%20x%209-inch%20pan%20or%20an%2011%20x%207-inch%20pan%20with%20a%20strip%20of%20foil%20or%20parchment,%20allowing%20edges%20to%20hang%20over%20opposite%20sides.%20%20In%20a%20bowl,%20stir%20together%20the%20butter,%20sugar%20and%20salt.%20%20Whisk%20in%20egg%20yolk,%20then%20stir%20in%20flour.%20%20Transfer%20dough,%20which%20will%20be%20very%20crumbly,%20to%20pan%20and%20press%20the%20mixture%20evenly%20into%20the%20bottom,%20building%20up%20edges%20slightly.%20%20Prick%20dough%20all%20over%20with%20a%20fork,%20then%20freeze%205%20to%207%20minutes%20until%20firm.%20%20Bake%20until%20light%20brown,%2025%20to%2030%20minutes.%3C/p%3E%3Cp%3EMake%20caramel%20topping:%20%20In%20a%20small,%20heavy%20saucepan%20over%20medium-high%20heat,%20combine%20all%20ingredients;%20cook%20and%20stir%20until%20sugar%20is%20dissolved.%20%20Bring%20to%20a%20boil%20and%20once%20mixture%20begins%20to%20bubble,%20stir%20constantly%20until%20thickened%20for%205%20minutes.%20%20Remove%20from%20heat%20and%20mix%20in%20the%20vanilla.%20%20Pour%20on%20top%20of%20warm%20or%20cooled%20shortbread.%20%20Let%20cool%20in%20pan%20for%20at%20least%202%20hours.%20%20Carefully%20lift%20bars%20from%20pan%20using%20parchment%20and%20transfer%20to%20a%20cutting%20board.%20%20Cut%20into%201x2-inch%20bars%20or%201%201/2-inch%20squares%20and%20sprinkle%20lightly%20with%20sea%20salt%20flakes.%20%20Makes%2036.%3C/p%3E%3Cp%3E%22Forgiveness%20is%20the%20economy%20of%20the%20heart...%20forgiveness%20saves%20the%20expense%20of%20anger,%20the%20cost%20of%20hatred,%20the%20waste%20of%20spirits.%22%20~%20Hannah%20More%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20Chocolate%20Covered%20Marshmallows%3C/p%3E%3Cp%3ETwo%20years%20ago:%20%20Lori's%20Caramels%3C/p%3E){kind=link}
