- In a large skillet over high heat put 1/2 c. of the extra virgin olive oil, add in the onions garlic, and thyme. Allow the onions to cook for 6 min.
- Cut the salt fish into 1-inch pcs, and add in them to the pot. Cook for 5 min, add in the tomatoes, and the rest of the oil. Season with salt and pepper, to taste, and let simmer for 15 min more. Garnish with sliced scallions.
- This recipe yields 4 to 6 servings.
