- Since we were provided with the recipes as Chef Jennifer was demonstrating, I wanted to share the fantastic Salsa Verde recipe:
- Salsa Verde
- 1 c. fresh basil
- 1 c. fresh parsley
- 1 c. fresh mint
- 2 c. olive oil
- 1/2 c. red wine vinegar
- 4 anchovies
- 1 T. capers
- 2 cloves garlic
- 1 t. black pepper

%20traveling%20between%20Oklahoma%20City%20and%20Tulsa,%20make%20sure%20you%20get%20off%20in%20Stroud%20and%20visit%20Territory%20Cellars.%20%20(I%20think%20there%20are%20other%20wineries%20in%20town%20as%20well%20as%20the%20famous%20Rock%20Cafe.)%20%20Last%20week,%20I%20was%20alerted%20to%20a%20special%20dinner%20they%20were%20having%20featuring%20a%20guest%20chef%20and%20northern%20Italian%20cuisine.%20%20Sign%20us%20up.%3C/p%3E%3Cp%3EAs%20we%20arrived,%20we%20were%20greeted%20by%20Joe,%20one%20of%20the%20winery%E2%80%99s%20owners.%20%20His%20first%20comments%20were%20that%20the%20guest%20chef%20was%20in%20the%20hospital,%20but%20that%20their%20own%20chef,%20Chef%20Jennifer,%20would%20be%20carrying%20on%20with%20the%20dinner%20and%20%20cooking%20demonstrations.%20%20I%20applaud%20Chef%20Jennifer%20because%20my%20impression%20was%20that%20she%20had%20only%20found%20out%20that%20night%20that%20she%20would%20be%20demonstrating%20the%20recipes%20for%20us.%20%20%20She%20did%20an%20amazing%20job%20stepping%20in%20and%20cooking%20another%20chef%E2%80%99s%20menu.%3C/p%3E%3Cp%3EBut,%20back%20to%20Joe,%20a%20down-to-earth%20regular%20guy%20who%20offered%20few%20apologies%20to%20the%20potential%20dinner%20disaster%20and%20kept%20telling%20us%20how%20informal%20they%20all%20were.%20%20He%20poured%20us%20his%20wine%20to%20taste%20and%20we%20settled%20on%20a%20dry%20red%20to%20start.%20%20Since%20we%20got%20there%20early,%20we%20were%20able%20to%20nab%20one%20of%20the%20few%20tables%20for%20two,%20grabbing%20one%20up%20front.%20%20%20We%20sat%20down%20and%20enjoyed%20our%20wine%20and%20our%20appetizers%20(bruschetta%20and%20fresh%20fruit)%20as%20we%20watched%20everyone%20scurry%20around.%20%20(I%20think%20we%20even%20heard%20a%20VERY%20last%20minute%20discussion%20about%20what%20wines%20they%20would%20pair%20with%20each%20course.)%3C/p%3E%3Cp%3EAgain,%20I%20would%20like%20to%20say%20that%20Chef%20Jennifer%20and%20the%20staff%20did%20a%20great%20job%20stepping%20in%20at%20the%20last%20minute.%20%20I%20got%20the%20impression%20that%20this%20was%20a%20community%20affair%20with%20lots%20of%20friends%20and%20family%20coming%20in%20to%20help%20make%20the%20evening%20a%20success.%20%20The%20chef%20didn%E2%80%99t%20seem%20like%20she%20was%20totally%20pleased%20with%20the%20quality%20of%20some%20of%20the%20ingredients%20that%20had%20been%20purchased%20for%20her%E2%80%94white%20fish%20instead%20of%20swordfish,%20red%20onions%20instead%20of%20scallions,%20and%20store-brand%20olive%20oil;%20however,%20she%20did%20pull%20it%20all%20together%20perfectly%20and%20she%20demonstrated%20everything%20very%20well.%3C/p%3E%3Cp%3EThe%20first%20course%20was%20Pesci%20Spiedini%20on%20rosemary%20skewers%20served%20with%20roasted%20corn.%20%20I%20am%20not%20a%20huge%20seafood%20eater,%20but%20I%20have%20to%20say%20that%20the%20fish%20was%20awesome%E2%80%94even%20if%20it%20wasn%E2%80%99t%20swordfish.%20%20An%20interesting%20note%20was%20that%20she%20included%20%20quartered%20peaches%20on%20the%20skewer.%3C/p%3E%3Cp%3EPorchetta%20with%20Salsa%20Verde%20with%20sides%20of%20roasted%20asparagus%20tips%20and%20Fagioli%20con%20Puttanesca%20came%20our%20way%20next.%20%20%20The%20pork%20was%20tender%20and%20had%20an%20interesting%20flavor%20as%20they%20set%20the%20meat%20on%20cedar%20planks%20before%20they%20cooked%20it.%20%20But%20the%20Salsa%20Verde%E2%80%94let%20me%20tell%20you%E2%80%94it%20was%20so%20great%20that%20I%20may%20replace%20the%20pesto%20in%20my%20repertoire%20with%20this%20recipe.%20%20I%20can%20imagine%20smearing%20this%20sauce%20on%20homemade%20pizza%20crust%20and%20topping%20it%20with%20a%20little%20feta%20or%20cojita.%3C/p%3E%3Cp%3EFor%20dessert,%20we%20were%20served%20Panna%20Cotta%20with%20grilled%20balsamic%20peaches.%20%20Again%E2%80%94incredible!%20%20I%20have%20to%20say%20that%20I%20have%20always%20thought%20Panna%20Cotta%20was%20a%20bit%20simple%20and%20pedestrian%20in%20taste,%20but%20topping%20it%20with%20the%20balsamic%20glazed%20peaches%20took%20it%20to%20a%20new%20level.%3C/p%3E%3Cp%3EChef%20Jennifer%20gave%20a%20great%20tip%20here:%20%20take%201/4%20cup%20regular%20balsamic%20vinegar%20and%20add%201%20tablespoon%20of%20brown%20sugar.%20%20Reduce%20%20this%20by%20half%20and%20you%20will%20have%20a%20glaze%20that%20tastes%20like%20100%20year%20old%20balsamic.%3C/p%3E%3Cp%3EEven%20though%20it%20was%20obvious%20that%20%E2%80%9CPlan%20B%E2%80%9D%20was%20in%20effect,%20I%20would%20definitely%20go%20back%20for%20another%20winery%20event.%3C/p%3E%3Cp%3EBlend%20until%20smooth.%20%20Refrigerate%201%20hour%20before%20serving.%3C/p%3E%3Cp%3EBasil%3C/p%3E%3Cp%3EMint%3C/p%3E%3Cp%3EParsley%3C/p%3E){kind=link}
