- 2 Tbsp. Oil, vegetable
- 1 x Onions, finely minced
- 1 x Garlic cloves, finely choppd
- 2 lrg Tomatoes, peeled, seeded, minced
- 1/2 tsp Sugar, granulated
- 2 x Chile, serrano, minced
- Â Â Salt
- Â Â Pepper, black
- 1 Tbsp. Coriander, minced

- Heat oil and fry onion and garlic till limp. Add in remaining ingredients, except coriander. Cook gently for 15 min. Taste for seasoning. Add in coriander and cook for 1-2 miutes more. Serve warm or possibly cool.
