Salmon Primavera With Lemon Butter Sauce

Ингредиенты

  • 12 ounce Buitoni Penne
  • 4 ounce Broccoli, broken into small florets
  • 4 ounce Fine green beans, trimmed & halved
  • 4 ounce Asparagus tips, trimmed
  • 2 ounce Butter
  •     (3 fl ounce white wine
  • 2 Tbsp. Caster sugar
  •     Finely grated rind and juice of 1/2 lemon
  • 2 tsp Cornflour
  •     Salt and freshly grnd black pepper
  • 10 ounce Fresh salmon, skinned, boned & cubed
  •     Fresh chervil leaves

  1. Cook pasta according to package instructions, adding vegetables halfway through cooking.
  2. Meanwhile, heat butter in a small saucepan and stir in wine, sugar, lemon rind and juice. Cook over a low heat stirring occasionally till the sugar has dissolved.
  3. Mix cornflour with 75ml (3fl ounce) cool water and stir into the lemon mix. Bring to the boil stirring continuously till thickened slightly.
  4. Season to taste. Stir in salmon, cover and simmer for 5-6 min.
  5. Drain pasta and vegetables then toss with lemon butter mix and salmon.
  6. Heat through, sprinkle with chervil and serve warm or possibly cool.
