,%20and%20fresh%20figs%20encased%20in%20pastry%20-%20made%20better%20because%20we%20were%20sitting%20on%20the%20shores%20of%20Lake%20Como...in%20the%20sun.%20%20It%20was%20an%20easy%20recipe%20to%20duplicate,%20however%20finding%20black%20mission%20figs%20this%20time%20of%20year%20is%20a%20bit%20trickier!%20%20I%20found%20mine%20at%20Pike%20Place%20Market%20-%20it's%20the%20end%20of%20the%20fig%20season%20which%20usually%20lasts%20from%20June%20through%20mid-October%20-%20so%20if%20you%20want%20to%20make%20this%20tart%20-%20and%20I%20think%20you%20should%20-%20act%20quickly!!%3C/p%3E%3Cp%3EThe%20pastry%20is%20quickly%20made%20in%20the%20food%20processor%20-%20but%20allow%20time%20for%20it%20to%20chill%20in%20the%20refrigerator/freezer%20before%20assembling%20tart.%20%20I%20spread%20a%20thin%20layer%20of%20frangipane%20over%20the%20rolled%20out%20pastry%20-%20it's%20so%20good,%20a%20bit%20lighter%20than%20almond%20butter%20and%20would%20be%20excellent%20to%20use%20in%20a%20chocolate%20dessert%20or%20a%20peach%20pie%20-%20YUM!%20%20Next%20up,%20you%20layer%20the%20figs,%20face%20up%20-%20I%20only%20had%208%20figs,%20next%20time%20I%20would%20buy%20more%20and%20use%20about%2012%20-%20so%20the%20tart%20is%20loaded%20with%20them.%20%20Fold%20the%20pastry%20up%20and%20over%20the%20figs,%20sprinkle%20with%20turbinado%20sugar%20and%20bake%20...it's%20a%20slice%20of%20Italy%20-%20worthy%20of%205%20dangs%20on%20the%20ol'%20meter!%3C/p%3E%3Cp%3ERustic%20Fig%20Tart%20-%20Pots%20and%20Pins%3C/p%3E%3Cp%3Eparchment%20paper%3C/p%3E%3Cp%3E8%20to%2012%20fresh%20figs,%20stems%20removed,%20sliced%20in%20half,%20then%20each%20half%20sliced%20into%20thirds%3C/p%3E%3Cp%3Eturbinado%20sugar%20for%20sprinkling%20%20(turbinado%20sugar%20has%20larger%20sugar%20crystals%20than%20granulated%20sugar%20and%20it%20is%20brown%20in%20color%20-%20it%20can%20be%20found%20in%20most%20grocery%20stores)%3C/p%3E%3Cp%3EFor%20the%20Pastry:%3C/p%3E%3Cp%3EMake%20the%20pastry:%20%20In%20the%20bowl%20of%20a%20food%20processor,%20combine%20the%20flour%20and%20salt%20and%20pulse%20a%20few%20times.%20%20Cut%20up%20the%20butter%20into%20small%20pieces%20and%20sprinkle%20over%20the%20flour/salt.%20%20Process%20until%20the%20mixture%20is%20crumbly,%20about%2020%20seconds.%20%20Add%20in%20the%20sour%20cream,%20lemon%20juice%20and%20water%20and%20process%20until%20mixture%20begins%20to%20form%20clumps.%20%20Remove%20from%20food%20processor%20and%20dump%20entire%20contents%20of%20bowl%20onto%20parchment%20paper.%20%20Without%20kneading,%20press%20the%20crumbs%20together%20until%20you%20have%20a%20ball.%20%20Wrap%20in%20plastic%20and%20refrigerate%20for%201%20hour%20or%20place%20in%20the%20freezer%20for%2020%20minutes.%20%20When%20ready%20to%20roll%20out%20the%20dough,%20place%20dough%20between%20two%20sheets%20of%20parchment%20and%20roll%20into%20a%2012-inch%20circle%20or%20there%20abouts.%20%20Don't%20worry%20if%20the%20circle%20isn't%20even,%20it's%20a%20rustic%20tart%20so%20it%20can%20be%20%22free-form!%22%3C/p%3E%3Cp%3EWhile%20the%20pastry%20is%20chilling,%20make%20the%20frangipane:%20%20Preheat%20oven%20to%20350%20degrees.%20%20Spread%20the%20almonds%20evenly%20on%20a%20rimmed%20baking%20sheet%20and%20place%20in%20the%20oven%20to%20roast%20for%20about%2010%20minutes.%20%20Transfer%20to%20a%20plate%20to%20cool%20to%20room%20temperature.%20%20Put%20the%20cooled%20almonds%20and%20sugar%20into%20the%20food%20processor%20and%20process%20until%20there%20are%20no%20large%20bits.%20%20Add%20the%20butter%20and%20egg%20and%20pulse%20until%20well%20blended.%20%20Frangipane%20will%20keep%20in%20the%20refrigerator%20for%20up%20a%20few%20days%20and%20in%20the%20freezer%20for%20a%20month.%20%20You%20will%20only%20use%201/4%20of%20the%20frangipane%20so%20wrap%20up%20the%20rest%20to%20save%20for%20another%20great%20dessert!%3C/p%3E%3Cp%3ETo%20assemble%20tart:%20%20Preheat%20oven%20to%20400%20degrees.%20%20After%20rolling%20out%20dough%20between%20parchment%20paper%20sheets,%20remove%20top%20sheet,%20lift%20entire%20bottom%20sheet%20carefully%20and%20place%20on%20top%20of%20a%20rimmed%20baking%20sheet,%20folding%20edges%20of%20paper%20under%20to%20fit%20the%20baking%20sheet.%20%20It's%20okay%20if%20the%20dough%20hangs%20off%20the%20edges%20a%20bit%20as%20it%20will%20be%20folded%20up.%20%20Spread%20frangipane%20(reserving%20the%20rest%20for%20a%20later%20use)%20on%20top%20of%20the%20rolled%20out%20pastry,%20leaving%20about%20a%201%201/2-inch%20margin%20all%20the%20way%20around.%20%20Top%20the%20frangipane%20with%20the%20sliced%20figs,%20placing%20them%20in%20circles%20and%20then%20filling%20in%20any%20spots%20with%20smaller%20pieces.%20%20Fold%20the%20pastry%20up%20and%20over%20the%20figs,%20pinching%20to%20secure%20where%20needed.%20%20Sprinkle%20entire%20tart%20with%20turbinado%20sugar.%20%20Bake%20in%20oven%20for%2040%20to%2045%20minutes%20or%20until%20tart%20is%20golden%20brown.%20%20Remove%20from%20oven%20and%20lift%20up%20the%20parchment%20paper%20carefully%20to%20a%20r
