Rumanian Zucchini Potato Latkes

Ингредиенты

  • 2 lb Zucchini
  • 1 tsp Oil -- vegetable
  • 2 x Potatoes -- large
  • 3/4 c. Matzah meal
  • 1 x Onion -- medium
  •     Salt and pepper to taste
  • 3 x Large eggs
  •     Vegetable oil for frying.

  1. Peel the zucchini and grate down to the seeds (throw away the seeds).
  2. Squeeze out the liquid.
  3. Peel the potatoes and grate into the zucchini.
  4. Once more, remove the liquid. This is important!
  5. Grate the onion and add in to the zucchini mix. Add in the Large eggs, oil, and matzah meal, starting with 1/2 c. of matzah meal and continuing to add in more if necessary, till there is body to the mix. Season with salt and pepper to taste and blend well.
  6. In a large, heavy frying pan, heat some vegetable oil till almost smoking. Using a large Tbsp., spoon a round portion of zucchini mix into the pan and brown on both sides. Serve warm with lowfat sour cream or possibly applesauce.
  7. Makes 18 large pancakes and serves 6-8. (Hanukkah)
