- Cut tomatoes in half horizontally. Scoop out centers, leaving 1/4-inch shell, invert shell to drain. In 10-inch skillet, cook breadcrumbs, onions and basil in margarine till lightly browned. Reserve 1/4 c. crumb mix; add in spinach and half of Velveeta to remaining crumb mix. Mix lightly. Place tomatoes in shallow baking dish; fill with spinach mix. Top with reserved crumb mix and Parmesan cheese.
- Bake at 350 degrees for 20 min. Top with remaining Velveeta; continue baking till cheese begins to heat.
