.%20It%20called%20for%20rubbing%20a%20mixture%20of%20cream%20cheese%20and%20rosemary%20under%20the%20skin%20and%20then%20brushing%20with%20Italian%20dressing%20before%20baking.%20I've%20used%20this%20method%20of%20rubbing%20seasoning%20under%20the%20skin%20of%20chicken%20and%20turkey%20before,%20just%20not%20with%20cream%20cheese.%20I%20was%20intrigued.%3C/p%3E%3Cp%3EThe%20chicken%20was%20delicious.%20The%20potatoes%20were%20yummy.%20And%20the%20whole%20family%20ate%20this%20without%20complaint.%20I'd%20definitely%20make%20this%20again.%3C/p%3E%3Cp%3ETo%20begin,%20I%20softened%20a%20block%20of%20cream%20cheese,%20then%20mixed%20it%20together%20with%20plenty%20of%20sea%20salt,%20a%20teaspoon%20of%20rosemary,%20and%20some%20pepper.%3C/p%3E%3Cp%3EThis%20chicken%20didn't%20come%20from%20the%20store,%20so%20it%20needed%20a%20little%20extra%20attention.%20I%20needed%20to%20remove%20the%20neck%20and%20tail%20and%20some%20remaining%20%22guts%22%20(sorry%20for%20that%20description).%20Then%20I%20rinsed%20the%20whole%20thing%20and%20separated%20the%20skin%20from%20the%20breast,%20legs,%20and%20thighs,%20using%20a%20wooden%20spoon%20and%20my%20fingers.%20The%20skin%20stays%20on,%20but%20you%20have%20to%20loosen%20it%20from%20the%20meat%20so%20that%20you%20can%20rub%20the%20cream%20cheese%20mixture%20in%20between.%20Finally,%20I%20began%20carefully%20spooning%20the%20cream%20cheese%20mixture%20under%20the%20skin...%3C/p%3E%3Cp%3Ebut%20then%20I%20ended%20up%20using%20my%20hands%20too%20so%20that%20it%20spread%20more%20evenly.%3C/p%3E%3Cp%3EI%20drizzled%20Italian%20dressing%20all%20over%20the%20bird,%20then%20brushed%20it%20around%20so%20that%20the%20chicken%20was%20evenly%20coated.%20After%20that,%20I%20popped%20her%20into%20a%20375%20degree%20oven%20for%20a%20couple%20of%20hours%20(cooking%20time%20will%20depend%20on%20the%20size%20of%20the%20chicken%20and%20your%20oven).%3C/p%3E%3Cp%3ENext,%20I%20went%20to%20work%20on%20the%20potatoes.%20I%20cut%20about%202%20lbs.%20of%20red%20potatoes%20into%20pieces,%20drizzled%20them%20with%20around%201/4%20cup%20of%20Italian%20dressing%20and%20tossed%20with%20more%20rosemary,%20salt,%20and%20pepper.%20Then%20I%20arranged%20them%20in%20a%20baking%20dish%20and%20slid%20them%20into%20the%20oven%20right%20next%20to%20the%20chicken.%20I%20stirred%20them%20a%20couple%20of%20times%20while%20they%20cooked%20to%20insure%20even%20browning.%3C/p%3E%3Cp%3EWhen%20the%20potatoes%20were%20tender%20and%20browned%20I%20removed%20them%20from%20the%20oven%20and%20stirred%20in%206%20slices%20of%20crumbled%20bacon%20and%202%20sliced%20green%20onions.%20I%20really%20liked%20these%20potatoes!%20If%20you've%20got%20any%20leftover,%20they%20would%20be%20really%20good%20fried%20up%20next%20to%20some%20eggs%20the%20next%20morning%20too!%3C/p%3E%3Cp%3EWhen%20the%20chicken%20was%20finished%20baking,%20I%20transferred%20it%20to%20a%20serving%20platter%20and%20arranged%20the%20potatoes%20around%20it%20before%20serving.%20I%20am%20aware%20that%20the%20skin%20on%20my%20chicken%20got%20pretty%20dark,%20but%20the%20meat%20was%20perfectly%20done%20and%20juicy%20and%20the%20potatoes%20piled%20around%20the%20bird%20made%20for%20a%20nice%20presentation.%3C/p%3E%3Cp%3EAfter%20we%20finished%20eating,%20I%20wrapped%20up%20what%20was%20left%20of%20the%20whole%20chicken%20and%20put%20it%20into%20our%20garage%20fridge.%20It's%20probably%20easier%20to%20pick%20the%20remaining%20meat%20from%20the%20bone%20while%20it's%20still%20warm,%20but%20we%20had%20places%20to%20go.%20This%20morning%20I%20picked%20off%20the%20remaining%20meat%20for%20a%20couple%20more%20meals,%20chicken%20tortilla%20soup%20and%20a%20chicken%20casserole.%20You%20can%20also%20bag%20the%20meat%20and%20freeze%20it%20for%20a%20later%20date.%20You%20can%20even%20boil%20the%20whole%20carcass%20for%20broth.%20The%20possibilities%20with%20a%20whole%20roasted%20chicken%20are%20endless!%3C/p%3E%3Cp%3EHere's%20the%20recipe%20that%20adapted%20from%20Kraft%20Food%20&%20Family%20Fall%202007:%3C/p%3E%3Cp%3ERosemary%20Roasted%20Chicken%20and%20Potatoes%3C/p%3E%3Cp%3EMake%20It%3C/p%3E%3Cp%3EHEAT%20oven%20to%20375%C2%B0F.%3C/p%3E%3Cp%3EMIX%20cream%20cheese,%201%20tsp.%20rosemary,%20salt,%20and%201/2%20tsp.%20pepper.%20Starting%20at%20neck%20of%20chicken,%20use%20handle%20of%20wooden%20spoon%20or%20fingers%20to%20carefully%20separate%20skin%20from%20meat%20of%20the%20breast,%20thighs%20and%20legs%20of%20chicken,%20being%20careful%20to%20not%20tear%20the%20skin.%20Spoon%20cream%20cheese%20mixture%20under%20skin;%20use%20fingers%20to%20push%20and%20spread%20some%20of%20the%20mixture%20out%20to%20thighs%20and%20legs.%20Place%20chicken%20in%20shallow%20pan.%20Brush%20with%202%20Tbsp.%20dressing.%3C/p%3E%3Cp%3ETOSS%20potatoes%20with%20remaining%20dressing,%20rosemary%20and%20pepper%20in%20separate%20pan.%20Bake%20chicken%20and%20potatoes%201-1/4%20hours%20or%20until%20chicken%20is%20done%20(165%C2%BAF),%20stirring%20potatoes%20every%2030%20min.%20and%20basting%20the%20chicken%20oc
