.%3C/p%3E%3Cp%3EThe%20La%20Cloche%20is%20a%20stoneware%20covered%20baker%20that%20is%20used%20to%20create%20a%20brick-oven-like%20environment%20in%20your%20home%20oven.%20%20It%20is%20perfect%20for%20making%20artisan%20breads%20and%20roasted%20tenderloins%20and%20chickens.%3C/p%3E%3Cp%3EI%20chose%20to%20use%20bread%20as%20my%20first%20experiment%20in%20the%20baker%20and%20was%20super%20pleased%20with%20the%20looks%20of%20this%20crusty%20loaf%20when%20I%20pulled%20it%20out%20of%20the%20oven.%20%20If%20you%20don%E2%80%99t%20have%20a%20La%20Cloche%20baker,%20you%20could%20use%20a%20large%20enamel%20pot%20or%20simple%20bake%20free-formed.%3C/p%3E%3Cp%3ENot%20only%20was%20it%20beautiful%20but%20the%20crust%20was%20unreal.%20%20Perfectly%20thick,%20not%20too%20thick,%20and%20hardy%20with%20that%20oh-so-desirable%20crunch.%20%20The%20inside%20of%20the%20bread,%20spiked%20with%20dried%20rosemary%20and%20garlic,%20was%20soft%20and%20delicious.%20%20I%20gifted%20half%20the%20loaf%20to%20my%20neighbor%20who%20provided%20me%20with%20the%20La%20Cloche%20which%20means%20I%E2%80%99ll%20be%20baking%20up%20a%202nd%20loaf%20of%20this%20stuff%20sooner%20than%20expected!%3C/p%3E%3Cp%3EWhen%20enjoying%20this%20loaf%20the%20second%20day,%20I%20whipped%20up%20a%20delicious%20combination%20of%20oil%20and%20vinegar.%20%20Rich%20extra%20virgin%20olive%20oil%20plus%20chocolate%20balsamic%20vinegar%20with%20a%20pinch%20of%20herbs%20de%20provence.%20%20The%20chocolate%20undertones%20were%20rich%20and%20savory.%20%20Beyond%20delicious.%3C/p%3E%3Cp%3ERosemary%20Garlic%20Loaf%20(adapted%20from%20Williams%20Sonoma)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EIn%20a%20bowl,%20sprinkle%20the%20yeast%20over%20the%20warm%20water;%20let%20the%20mixture%20stand%20until%20bubbly,%20about%205%20minutes.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer,%20fitted%20with%20the%20dough%20hook%20attachment,%20combine%20flours,%20rosemary,%20garlic%20salt%20and%20yeast%20mixture.%3C/p%3E%3Cp%3EKnead%20on%20medium%20speed%20until%20the%20dough%20is%20soft%20and%20smooth,%2010%20to%2012%20minutes.%20Turn%20out%20onto%20to%20a%20lightly%20floured%20surface%20and%20shape%20into%20a%20ball.%3C/p%3E%3Cp%3EReturn%20the%20dough%20to%20the%20bowl,%20cover%20and%20let%20rise%20in%20a%20warm%20place%20until%20doubled,%20about%201%20hour.%20Punch%20the%20dough%20down%20and%20let%20rise%20until%20doubled,%2045%20to%2050%20minutes.%3C/p%3E%3Cp%3EOn%20a%20lightly%20floured%20surface,%20press%20the%20dough%20flat;%20stretch%20the%20sides%20of%20the%20dough%20down%20and%20under%20to%20form%20a%20tight,%20round%20shape.%20Pinch%20the%20seam%20underneath%20the%20loaf%20closed.%20Place%20the%20loaf%20in%20a%20floured%20round%20stoneware%20baker%20and%20dust%20the%20top%20with%20flour.%20Cover%20with%20the%20lid%20and%20let%20rise%2030%20to%2040%20minutes.%3C/p%3E%3Cp%3EPreheat%20an%20oven%20to%20400%C2%B0F.%3C/p%3E%3Cp%3EUsing%20a%20serrated%20knife,%20cut%20a%20large,%20shallow%20X%20on%20top%20of%20the%20loaf.%20Cover%20and%20bake%20until%20the%20loaf%20is%20golden%20and%20sounds%20hollow%20when%20tapped%20on%20the%20bottom,%20about%201%20hour.%3C/p%3E%3Cp%3EMakes%201%20loaf.%3C/p%3E){kind=link}
