- Â Â Extra virgin olive oil as needed
- Â Â Blackening seasoning
- 2 ounce Jack Daniels whiskey
- 2 ounce water
- 1 quart heavy cream
- 2 Tbsp. thyme
- 9 ounce gorgonzola cheese
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 5 lb Yukon Gold potatoes
- 4 ounce butter
- 4 ounce lowfat sour cream
- 8 ounce white cheddar cheese
- 4 ounce heavy cream
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- Preparation of the Steak: Heat a skillet to medium-high heat. Rub steak with extra virgin olive oil and sprinkle with 2 Tbsp. of Blackened Spice (available in gourmet stores). Sear steak for 2 min on each side. Finish in oven to your degree of doneness.
- Preparation of the Gorgonzola Sauce: Reduce Jack Daniels and water by half. Add in cream and keep reducing it till it coats the back of a spoon. Next add in the gorgonzola cheese and let it heat into the sauce. Season with salt, pepper, and thyme.
- Preparation for the Lowfat sour cream Mashed Potatoes: Boil potatoes in water till fork tender. Drain Well. In a metal bowl hand mash the potatoes with the lowfat sour cream, cool butter, cheese, and cream. Season with salt and pepper.
