%3C/p%3E%3Cp%3ELeave%20a%20good%20layer%20of%20fat%20on%20the%20surface,%20about%201/3%20inch%20at%20least.%20Score%20lightly,%20but%20not%20all%20the%20way%20through%20to%20the%20meat.%3C/p%3E%3Cp%3EDo%20not%20overcook!%20You%20are%20better%20off%20taking%20it%20out%20whilst%20still%20a%20bit%20pink%20in%20the%20middle%20and%20allowing%20it%20to%20set%20for%20a%20fifteen%20minutes%20or%20so,%20lightly%20covered%20with%20foil.%20During%20the%20setting%20time%20it%20will%20finish%20cooking%20through%20and%20still%20be%20lovely%20and%20moist.%3C/p%3E%3Cp%3ETo%20make%20crunchy%20pork%20crackling,%20cook%20the%20rind%20separately%20from%20the%20meat.%20Cut%20the%20rind%20from%20the%20meat%20with%20a%20small,%20sharp%20knife%20and%20place%20it%20in%20a%20shallow%20baking%20dish;%20brush%20rind%20with%20one%20tablespoon%20of%20vegetable%20oil%20and%20rub%20with%20one%20tablespoon%20of%20coarse%20cooking%20salt.%20Bake,%20uncovered,%20in%20a%20very%20hot%20oven%20for%20about%2040%20minutes%20or%20until%20rind%20browns%20and%20crackles.%20Drain%20on%20absorbent%20paper.%20(I%20have%20a%20smaller%20oven%20on%20top%20of%20my%20larger%20oven%20and%20I%20cook%20it%20in%20this%20while%20the%20roast%20is%20cooking%20in%20the%20oven%20below.)%20No%20more%20crackling%20failure!%3C/p%3E%3Cp%3EI%20toyed%20with%20the%20idea%20of%20stuffing%20my%20rack%20with%20fruit%20and%20other%20goodies,%20but%20in%20the%20end%20I%20decided%20that%20I%20would%20stay%20more%20traditional%20and%20rub%20it%20all%20over%20with%20a%20tasty%20mixture%20of%20herbs%20and%20olive%20oil.%20Roasting%20some%20root%20vegetables%20along%20side%20.%20.%20.%20delicious%20sweet%20potato,%20carrots%20and%20potatoes.%20I%20also%20decided%20to%20make%20good%20use%20of%20the%20gooseberries%20that%20are%20ripe%20in%20my%20garden%20at%20the%20moment.%3C/p%3E%3Cp%3EFruit%20goes%20very%20well%20with%20pork%20and%20need%20not%20just%20be%20apples,%20which%20are%20oh%20so%20scrummy.%20Gooseberries%20also%20go%20wonderfully!%20I%20added%20a%20hint%20of%20sharpness%20to%20the%20sauce%20by%20adding%20some%20creamy%20horseradish%20to%20the%20mix,%20along%20with%20the%20richness%20of%20a%20knob%20of%20butter.%3C/p%3E%3Cp%3EThis%20was%20fabulous!%20I%20think%20I%20made%20a%20wonderful%20choice!%20To%20see%20more%20pork%20recipes%20be%20sure%20to%20check%20out%20the%20Pork%20On%20Your%20Fork%20Campaign%20page!%3C/p%3E%3Cp%3E*Roasted%20Rack%20of%20Pork%20and%20Roots%20with%20a%20Gooseberry%20Horseradish%20Sauce*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EA%20traditional%20roast,%20moist%20and%20delicious,%20accompanied%20by%20a%20variety%20of%20roasted%20root%20vegetables%20and%20served%20with%20a%20scrummy%20Gooseberry%20Horseradish%20Sauce%20on%20the%20side!%3C/p%3E%3Cp%3E1%20four%20rib%20piece%20of%20Rack%20of%20Pork%20(Free%20range%20of%20course!)%3C/p%3E%3Cp%3E(about%202%201/2%20pounds)%3C/p%3E%3Cp%3E(Remove%20the%20crackling%20and%20reserve%20for%20another%20use)%3C/p%3E%3Cp%3EFor%20the%20rub:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20Remove%20the%20crackling%20layer%20from%20your%20pork,%20leaving%20about%201/3%20of%20an%20inch%20of%20nice%20fat.%20Score%20this%20in%20diamonds%20with%20a%20sharp%20knife,%20without%20cutting%20all%20the%20way%20down%20to%20the%20meat.%3C/p%3E%3Cp%3EWhisk%20together%20the%20olive%20oil,%20seasoning%20salt,%20black%20pepper,%20paprika,%20parsley%20flakes,%20thyme%20and%20garlic.%20Mix%20well%20and%20then%20rub%20this%20all%20over%20the%20meat%20until%20coated.%20Place%20in%20a%20roasting%20pan%20and%20then%20cook%20for%20about%2035%20to%2040%20minutes%20while%20you%20get%20the%20vegetables%20ready,%20and%20make%20your%20sauce.%3C/p%3E%3Cp%3EPrepare%20your%20vegetables.%20Put%20them%20into%20a%20bowl.%20Whisk%20together%20the%20oil,%20parsley%20flakes,%20salt%20and%20pepper.%20Toss%20the%20vegetables%20with%20this%20mixture,%20coating%20them%20all%20over.%3C/p%3E%3Cp%3ETo%20make%20your%20sauce,%20place%20the%20gooseberries%20in%20a%20saucepan%20along%20with%20the%20wine.%20Bring%20to%20the%20boil,%20then%20reduce%20to%20a%20slow%20simmer%20and%20cover.%20Simmer%20for%20about%2010%20minutes%20until%20very%20tender.%20Push%20the%20mixture%20through%20a%20sieve%20into%20a%20clean%20pan,%20scraping%20through%20as%20much%20as%20you%20can.%20Discard%20any%20solids%20left%20in%20the%20sieve.%20Whisk%20in%20the%20salt,%20sugar%20and%20butter.%20Cook%20and%20stir%20for%20about%205%20minutes.%20Keep%20warm.%3C/p%3E%3Cp%3ERemove%20the%20pork%20from%20the%20oven.%20Move%20it%20to%20the%20side.%20Toss%20in%20the%20vegetables%20and%20roll%20them%20around%20in%20the%20pork%20fat%20in%20the%20roasting%20tin.%20Move%20them%20until%20they%20are%20around%20the%20roast.%20Cover%20with%20some%20aluminium%20foil%20and%20then%20return%20to%20the%20oven.%20Roast%20for%20a%20further%2035%20to%2040%20minutes.%20Remove%20the%20pork%20and%20place%20on%20a%20plate,%20covering%20loosely%20with%20foil.%20Give%20the%20vegetables%20a%20stir%20in%20the%20pan%20juices.%20Increase%20the%20oven%20temperature%20to%20230*C/450*F/%20gas%20mark%207.%20Return%20the%20tray%20to%20the%20oven%20and%20roast%20uncoverd%20for%2010%20to%2015%20minutes,%20until%20they%20are%20tender%20and%20beginning%20to%20brown.%3C/p%3E%3Cp%3EServe%20the%20roast%20cut%20into%20slices,%20one%20rib%20per%20person,%20along%20with%20a%20portion%20of%20the%20roasted%20vegetables%20and%20some%20of%20the%20sauce.%20Pass%20the%20remainder%20of%20the%20warm%20sauce%20at%20the%20table.%3C/p%3E%3Cp%3EI%20have%20to%20just%20say,%20this%20was%20one%20very%20tasty%20joint%20of%20pork!%20I'm%20still%20licking%20my%20chops!!%20(no%20pun%20intended!)%3C/p%3E){kind=link}
