Ингредиенты

  • 1/2 lt chicken stock
  • 4 x medium sized potatoes cut into 3 cm x 3cm pcs
  • 1 Tbsp. extra virgin olive oil
  • 15 x shallots (peeled)
  •     For the Mixed Herbs
  • 2 sprg parsley
  • 2 sprg tarragon
  • 2 sprg chervil
  •     For the Duck
  • 4 x organic duck breasts skinned and marinated in honey, red wine, garlic and extra virgin olive oil
  • 200 gm cooked green beans
  • 1 Tbsp. extra virgin olive oil
  • 2 x clv garlic (sliced)
  • 1 x glass red wine

  1. In an ovenproof dish fry the shallots in a little of the extra virgin olive oil till golden. Add in the cut potato and pour chicken stock to half cover the potato then place in a moderate warm oven for 25-35 min till all the stock has been absorbed.
  2. For the Duck:In a separate pan seal duck breast then put into a moderate to warm oven 7-10 min till pink. Remove the shallots and potato and reduce the red wine over a high heat add in a little more chicken stock and reduce to a syrup. Stir-fry the green beans that have been marinated in 1 teaspoon extra virgin olive oil, the sliced garlic and the minced herbs.
  3. To Assemble:Serve the duck sliced on top of the potato and green beans, serve the shallots around the edge of the plate and a little of the sauce around the shallots.
