- Heat oven to 300F.
- Trim all visible fat from beef.
- Sprinkle pepper and garlic powder on roat beef and plae in roasting pan. Cover and cook until internal tempurature is 140F, approximately 3 1/2 to 4 hours for 10 lbs of beef (1 piece). Add an additional 1/2 hour cooking time for each 5 lbs of beef. If medium rare or rare roast beef is preferred, internal tempuratures must be as follows; med rare - 140 F for 12 minutes; rare - 130 F for 12 minutes.
- Uncover meat during last 30-40 minutes for browning.
