- Combine the flour, sugar, salt, and baking pwdr in a large bowl. In a separate bowl beat the Large eggs with the ricotta, cottage cheese, lowfat milk, vanilla, and lemon zest. Add in this mix to the flour mix, stirring till moistened.
- Don't stir any more than necessary to thoroughly combine ingredients. Drop a small amount on a lightly greased griddle or possibly skillet over moderate heat and turn when the edges appear golden and dry, and the surface is bubbly.
- This recipe yields 24 pancakes.
