,%20fresh%20raw%20veggies,%20grilled%20tiger%20prawns,%20and%20garnished%20with%20fresh%20basil,%20cilantro,%20fried%20onions%20and%20peanuts.%20Its%20so%20simple,%20so%20light,%20and%20I%20recently%20realized%20-%20SO%20easy%20to%20make%20at%20home!%20Most%20of%20it%20can%20be%20prepared%20in%20advance%20-%20so%20making%20it%20for%20company%20was%20a%20breeze.%20When%20people%20arrived,%20all%20we%20had%20to%20do%20was%20fire%20up%20the%20grill%20and%20enjoy%20the%20evening.%3C/p%3E%3Cp%3EThere%20are%20a%20few%20basic%20items%20that%20are%20essential%20to%20make%20Bun%20dishes%20(Bun%20is%20Vietnamese%20for%20rice%20vermicelli%20noodles)%20-%20fresh%20crisp%20bean%20sprouts,%20Nuoc%20Cham,%20fresh%20basil%20and%20cilantro,%20some%20spicy%20chili's%20and%20of%20course%20the%20delicious%20noodles.%20The%20rest%20seems%20to%20be%20slightly%20different%20everywhere%20I%20go%20-%20so%20I%20just%20made%20a%20version%20with%20all%20of%20my%20favorites%20and%20with%20one%20slightly%20non-Vietnamese%20addition%20-%20Peanut%20sauce.%20I%20happen%20to%20love%20spicy%20peanut%20sauce.%20So,%20instead%20of%20topping%20with%20chopped%20peanuts,%20I%20served%20with%20peanut%20sauce%20instead.%20This%20sauce%20keeps%20well%20in%20the%20fridge%20-%20so%20make%20plenty%20extra%20and%20use%20it%20in%20stir-fry,%20as%20a%20dipping%20sauce%20for%20meat,%20tofu%20or%20spring%20rolls,%20or%20even%20as%20a%20salad%20dressing.%3C/p%3E%3Cp%3EFolks%20-%20this%20dish%20was%20simply%20amazing.%20The%20noodles%20absorb%20the%20flavor%20of%20the%20Nuoc%20Cham%20which%20is%20perfectly%20complimented%20by%20the%20smokey,%20spicy%20grilled%20shrimp%20and%20peanut%20sauce;%20with%20little%20bursts%20of%20flavor%20from%20chili%20peppers%20and%20herbs%20and%20crunch%20from%20the%20fried%20onions,%20bean%20sprouts%20and%20cucumbers%20it%20is%20just%20sublime.%20To%20me%20-%20its%20the%20perfect%20combination%20of%20flavors%20and%20texture%20and%20makes%20a%20wonderfully%20cool%20meal%20in%20the%20very%20hot%20summer.%3C/p%3E%3Cp%3EWhile%20the%20title%20says%20grilled%20shrimp%20-%20I%20served%20both%20that%20and%20grilled%20tofu,%20both%20of%20which%20were%20marinated%20in%20the%20peanut%20sauce.%20This%20dish%20is%20easily%20made%20vegan%20when%20eaten%20with%20tofu%20-%20though%20you%20will%20have%20to%20leave%20out%20the%20Nuoc%20Cham%20(I%20couldn't%20not%20find%20a%20satisfactory%20substitution%20for%20fish%20sauce,%20though%20you%20could%20just%20make%20a%20spicy%20broth%20with%20peppers%20&%20garlic%20and%20get%20a%20similar%20effect).%20The%20tofu%20was%20absolutely%20delicious%20as%20well%20-%20the%20sauce%20carmelizes%20and%20blackens%20on%20the%20tofu%20which%20really%20absorbs%20the%20smokiness%20of%20the%20grill.%3C/p%3E%3Cp%3EReally,%20you%20can%20do%20any%20kind%20of%20topping%20for%20these%20noodles%20-%20cut%20up%20spring%20rolls%20or%20any%20kind%20of%20meat%20or%20vegetable%20you%20like.%20I%20have%20had%20it%20with%20chicken,%20pork%20and%20beef%20-%20and%20while%20Shrimp%20or%20tofu%20is%20my%20favorite%20-%20they%20are%20all%20delicious.%20This%20is%20also%20really%20cheap.%20These%20amounts%20I%20have%20included%20will%20feed%205%20people%20(heartily).%20Using%20items%20from%20your%20garden%20and%20pantry%20and%20an%20inexpensive%20topping%20-%20this%20meal%20is%20a%20lot%20of%20flavor%20without%20a%20lot%20of%20cash.%20Check%20your%20local%20Asian%20grocery%20for%20a%20lot%20of%20the%20items%20you%20might%20have%20trouble%20finding%20(I%20even%20recommend%20getting%20your%20herbs%20and%20bean%20sprouts%20there%20-%20I%20find%20they%20are%20usually%20better%20and%20less%20expensive%20than%20the%20typical%20grocery%20chains).%3C/p%3E%3Cp%3ERice%20Vermicelli%20with%20Grilled%20Shrimp%20&%20Spicy%20Peanut%20Sauce%20(Bun%20Tom%20Xao)%3C/p%3E%3Cp%3EThai%20basil%3C/p%3E%3Cp%3ECilantro%3C/p%3E%3Cp%3Efresh%20crisp%20bean%20sprouts%3C/p%3E%3Cp%3E3%20sriracha%20d%20chili's,%20cored/seeded%20and%20minced%3C/p%3E%3Cp%3Ecrispy%20fried%20onions%3C/p%3E%3Cp%3E1%20cucumber,%20diced%20or%20julienned%3C/p%3E%3Cp%3E1%20and%201/2%20pkgs%20Bun%20noodles%20(rice%20vermicelli)%3C/p%3E%3Cp%3E1%20and%201/2%20lbs%20large%20Tiger%20Shrimp,%20peeled%20and%20de-veined%3C/p%3E%3Cp%3EAND/OR%201%20large%20brick%20of%20extra%20firm%20tofu,%20sliced%3C/p%3E%3Cp%3EOptional%20other%20additions%20that%20I%20didn't%20use%20this%20time%20but%20are%20quite%20good:%3C/p%3E%3Cp%3EHoisin%20Sauce%20(sooo%20good%20with%20this)%3C/p%3E%3Cp%3Efresh%20mint%3C/p%3E%3Cp%3Edry%20roasted%20peanuts,%20chopped%3C/p%3E%3Cp%3Ecarrots,%20julienned%3C/p%3E%3Cp%3Elettuce%20or%20cabbage%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFirst%20-%20make%20your%20sauces%20(recipes%20below).%3C/p%3E%3Cp%3EMarinate%20shrimp%20(and/or%20tofu)%20in%20a%20few%20tablespoons%20of%20peanut%20sauce.%20Allow%20to%20sit%20in%20the%20fridge%20while%20you%20prepare%20the%20rest%20of%20the%20dish.%3C/p%3E%3Cp%3EPrepare%20the%20Noodles%20(can%20be%20done%20up%20to%202%20hours%20in%20advance):%3C/p%3E%3Cp%3EBring%20a%20stock%20pot%20of%20water%20to%20boiling.%20Add%20the%20noodles%20and%20allow%20to%20boil%20for%203%20to%205%20minutes%20(I%20did%20mine%20for%20exactly%205%20and%20they%20were%20perfect).%20Stir%20once%20or%20twice%20as%20they%20boil%20to%20break%20the%20noodles%20apart.%3C/p%3E%3Cp%3EDrain%20the%20noodles%20in%20a%20colander%20and%20rinse%20in%20cold%20water%20until%20the%20noodles%20are%20cool%20and%20the%20water%20runs%20clear.%20Let%20the%20noodles%20drain%20in%20the%20colander%20for%20at%20least%2030%20minutes,%20or%20can%20leave%20them%20for%20up%20to%202%20hours%20unrefrigerated.%20Before%20serving,%20run%20just%20a%20bit%20of%20warm%20water%20over%20the%20noodles%20so%20they%20aren't%20sticking%20together%20(I%20also%20like%20them%20to%20not%20be%20so%20cold.%20If%20you%20want%20them%20cool,%20rinse%20with%20cool%20water%20instead).%3C/p%3E%3Cp%3EGrill%20the%20shrimp%20and/or%20tofu%20over%20moderate%20heat%20just%20until%20done.%20The%20shrimp%20will%20only%20take%20around%204%20or%205%20minutes%20(or%20even%20less).%20The%20tofu,%20slightly%20more.%3C/p%3E%3Cp%3EBring%20it%20all%20together:%3C/p%3E%3Cp%3EFill%20each%20bowl%20with%20noodles.%20Top%20with%20a%20handful%20of%20bean%20sprouts,%20fried%20onions,%20a%20pinch%20of%20the%20diced%20chili%20peppers,%20and%20cucumber.%20Tear%20the%20basil%20and%20cilantro%20into%20each%20bowl.%20Top%20with%20with%20the%20shrimp%20(or%20tofu).%3C/p%3E%3Cp%3EPass%20the%20Nuoc%20Cham%20at%20the%20table%20-%20each%20person%20should%20pour%20on%20about%203%20or%204%20tbs%20of%20the%20stuff.%20Pass%20the%20peanut%20sauce%20as%20well%20-%20which%20can%20be%20added%20to%20taste%20(along%20with%20Hoisin%20or%20Sriracha%20if%20you%20like).%3C/p%3E%3Cp%3EToss%20the%20noodles,%20toppings%20and%20sauces%20together%20a%20few%20times%20with%20chopsticks%20or%20fork,%20and%20enjoy!!%3C/p%3E%3Cp%3ECombine%20Sambal-Oelek,%20Sriracha,%20water%20and%20sugar.%20Stir%20well%20-%20until%20sugar%20has%20dissolved.%20Add%20the%20fish%20sauce%20and%20lime%20juice%20and%20stir%20until%20combined.%20Make%20at%20least%2015%20minutes%20before%20serving%20-%20but%20the%20earlier%20the%20better,%20you%20can%20even%20make%20it%20days%20in%20advance%20(it%20will%20keep%20for%20up%20to%20a%20month).%20I%20just%20stir%20it%20all%20up%20in%20a%20jar%20and%20keep%20it%20in%20the%20fridge,%20then%20on%20the%20day%20I%20need%20I%20take%20it%20out%20and%20let%20it%20come%20to%20room%20temp%20before%20using%20(I%20don't%20like%20it%20to%20make%20the%20dish%20cold).%3C/p%3E){kind=link}
