Working at a public high school is a job that I thoroughly enjoy. Seriously! I like talking to teenagers, and their parents. My job is challenging, with just the right amount of fun, and my day flies by really fast.
Each school year seems to go by faster and faster, and the hard work is rewarded with one month off (without pay). During my summer break, we had an unexpected treat. Craig's college age niece came to visit us, from Missouri. She's been enduring triple-digit temperatures--so when I apologized for the overcast and cloudy 60-ish degree weather, she responded that she was thrilled to have a chance to cool off.

.%20%20During%20my%20summer%20break,%20we%20had%20an%20unexpected%20treat.%20Craig's%20college%20age%20niece%20came%20to%20visit%20us,%20from%20Missouri.%20%20%20She's%20been%20enduring%20triple-digit%20temperatures--so%20when%20I%20apologized%20for%20the%20overcast%20and%20cloudy%2060-ish%20degree%20weather,%20she%20responded%20that%20she%20was%20thrilled%20to%20have%20a%20chance%20to%20cool%20off.%3C/p%3E%3Cp%3EAt%20last%20the%20sun%20came%20out,%20and%20it%20was%20time%20to%20do%20some%20backyard%20grilling.%20Miss%20Becky%20has%20never%20had%20rib-eye%20steaks.%20Tsk,%20tsk.%20%20%20I%20needed%20to%20expand%20her%20college%20menu,%20so%20I%20bought%20some%20rib-eyes,%20and%20asked%20Craig%20to%20fire%20up%20the%20Weber%20grill.%20%20%20Then%20I%20remembered...%20I%20had%20bookmarked%20a%20recipe%20in%20the%20June%202011%20Cuisine%20at%20Home%20issue.%20The%20front%20cover%20photo%20had%20my%20mouth%20watering,%20and%20I%20made%20a%20mental%20note%20to%20make%20it.%20%20The%20time%20had%20come!%3C/p%3E%3Cp%3EAccording%20to%20Cuisine%20at%20home,%20Bistecca%20alla%20Fiorentia%20is%20one%20of%20the%20most%20celebrated%20dishes%20in%20Tuscany.%20%20In%20doing%20a%20little%20bit%20of%20internet%20research,%20I%20see%20that%20a%20Porterhouse%20cut%20of%20beef%20is%20most%20traditional.%20%20I%20think%20that%20a%20Rib-Eyes%20is%20a%20great%20alternative%20choice,%20because%20it%20has%20a%20lot%20of%20marbling.%20As%20the%20interior%20fat%20melts,%20it%20keeps%20the%20steak%20flavorful%20and%20moist--%20which%20is%20a%20great%20failsafe,%20in%20case%20you%20overcook%20a%20bit%20longer%20than%20you%20intended%20to.%3C/p%3E%3Cp%3EI%20realized%20that%20I%20had%20all%20of%20the%20ingredients%20to%20make%20this%20recipe,%20so%20off%20I%20went%20to%20make%20this%20recipe!%20I've%20never%20been%20to%20Tuscany%20(and%20it's%20on%20my%20bucket%20list),%20so%20I%20decided%20that%20%20Tuscany%20was%20coming%20to%20our%20own%20California%20backyard.%3C/p%3E%3Cp%3EI%20always%20have%20shallots%20in%20my%20refrigerator,%20and%20the%20pickled%20shallots%20are%20made%20with%20fresh%20orange%20juice,%20white%20wine%20vinegar,%20salt%20and%20pepper.%20NOTE:%20Zest%20the%20orange,%20first,%20because%20you'll%20use%20it%20for%20the%20steaks.%20Easy%20peasy.%3C/p%3E%3Cp%3EBring%20the%20liquids%20to%20a%20boil,%20and%20remove%20from%20heat.%3C/p%3E%3Cp%3EAdd%20the%20shallots,%20sprinkle%20with%20salt,%20add%20some%20pepper,%20cover%20and%20let%20sit%20for%20at%20least%2015%20minutes%20(or%20make%20it%20the%20night%20before.%20Done.%3C/p%3E%3Cp%3EChop%20some%20fresh%20mint%20and%20basil,%20and%20add%20to%20extra-virgin%20olive%20oil%20and%20orange%20zest.(I%20almost%20didn't%20add%20the%20mint,%20because%20my%20husband%20claims%20he%20doesn't%20like%20it--%20more%20on%20that,%20later.)%3C/p%3E%3Cp%3EAdd%20some%20fresh%20minced%20garlic,%20salt%20and%20pepper%20and%20add%20this%20to%20a%20shallow%20dish.%20Set%20aside.%3C/p%3E%3Cp%3EGrill%20the%20steaks%20for%20about%205%20minutes,%20each%20side.%20%20The%20steaks%20I%20bought%20weren't%203-inches%20thick,%20so%20these%20took%20about%206%20minutes%20to%20cook%20to%20medium.%3C/p%3E%3Cp%3ESet%20the%20steaks%20into%20the%20olive%20oil%20mixture,%20cover%20with%20foil%20and%20allow%20to%20rest%20for%20five%20minutes;%20flip%20the%20steaks%20over%20and%20serve%20with%20the%20pickled%20shallots.%3C/p%3E%3Cp%3EPour%20your%20choice%20of%20beverage%20to%20go%20with%20this%20steak.%20Serve%20the%20steak%20with%20the%20pickled%20shallots--%20which%20Becky%20wasn't%20quite%20willing%20to%20try.%20%20(Kids...%20even%20at%2021,%20she's%20slowly%20branching%20out%20from%20loving%20grilled%20cheese%20sandwiches.)%3C/p%3E%3Cp%3EVERDICT:%20%20It%20think%20that%20Becky's%20critique%20of%20the%20steaks%20speaks%20volumes--%20%22these%20are%20the%20best%20steaks%20I've%20ever%20had%20in%20my%20life!%22%20%20(All%2021%20years...hahaha)%3C/p%3E%3Cp%3EFor%20me,%20that's%20the%20ultimate%20compliment.%20%20Craig%20loved%20the%20steak,%20too.%20%20I%20loved%20the%20look%20of%20surprise,%20on%20his%20face,%20when%20I%20told%20him%20he%20just%20ate%20mint.%20You%20see,%20Craig%20has%20always%20shunned%20the%20idea%20of%20mint%20in%20any%20kind%20of%20food.%20He%20says%20it's%20too%20overwhelming.%20%20Ha!%20%20The%20mint,%20orange%20and%20basil%20is%20lovely%20combination%20and%20has%20a%20perfect%20summertime%20balance%20of%20flavors.%20%20Yes,%20I'd%20make%20this%20again,%20and%20I%20hope%20you%20try%20it.%3C/p%3E%3Cp%3EMy%20summer%20break%20ended%20two%20weeks%20ago,%20and%20I'm%20one%20very%20busy%20little%20worker%20bee.%20%20Things%20are%20starting%20to%20settle%20down,%20so%20I%20can%20share%20recipes%20more%20often%20with%20you.%20%20Yes!%3C/p%3E){kind=link}
