.%20I%20just%20need%20to%20overlook%20the%20SNAKES,%20and%20the%20black%20flies%20(who%20seem%20to%20find%20me%20rather%20tasty),%20and%20the%20ticks,%20(who%20also%20find%20me%20rather%20tasty),%20and%20the%20ginormous%20rabbits%20that%20just%20seem%20to%20come%20out%20of%20nowhere!%3C/p%3E%3Cp%3EIn%20our%20garden%20there%E2%80%99s%20a%20HUGE%20patch%20of%20rhubarb.%20Once%20it%20grew%20enough%20to%20use,%20my%20mind%20started%20swirling%20with%20thoughts%20of%20what%20wonderful%20things%20I%20could%20make%20with%20this%20rhubarb.%3C/p%3E%3Cp%3EThere%E2%80%99s%20a%20LOT%20of%20rhubarb,%20so%20be%20prepared%20for%20many%20rhubarb%20recipes%20to%20come.%20I%20did%20freeze%20a%20bunch%20so%20I%20have%20it%20handy%20for%20my%20new%20business%20venture%20The%20Maine%20Ingredients%20(on%20FB%20too,%20head%20over%20and%20like%20my%20page,%20please.)%3C/p%3E%3Cp%3ESitting%20around%20with%20Lisa%20one%20morning%20and%20talking%20about%20recipes%20for%20rhubarb,%20her%20face%20lit%20up%20and%20she%20said,%20%E2%80%98There%E2%80%99s%20a%20great%20looking%20recipe%20for%20Rhubarb%20Ice%20Cream%20in%20the%20New%20York%20Times.%20It%20has%20a%20caramel%20swirl!%E2%80%99%3C/p%3E%3Cp%3ETruth%20of%20the%20matter%20is,%20I%20had%20never%20made%20anything%20with%20rhubarb,%20hadn%E2%80%99t%20really%20eaten%20rhubarb%20before,%20so%20I%20wasn%E2%80%99t%20so%20sure%20about%20rhubarb%20in%20ice%20cream.%20BUT%20IT%20HAS%20A%20CARAMEL%20SWIRL!%20How%20bad%20could%20it%20possibly%20be!?%3C/p%3E%3Cp%3EOh,%20it%E2%80%99s%20not%20bad%20at%20all.%20In%20fact,%20it%E2%80%99s%20freakin%E2%80%99%20fabulous!%20The%20rhubarb%20is%20sweet%20and%20little%20syrupy,%20the%20ice%20cream%20itself%20has%20a%20nice,%20surprising%20tang%20from%20the%20sour%20cream%20(which%20I%20wasn%E2%80%99t%20sure%20about%20as%20an%20ice%20cream%20ingredient),%20and%20the%20caramel%20%E2%80%A6%20oh,%20my,%20my,%20the%20caramel.%20The%20caramel%20is%20just%20decadent.%20Next%20time,%20it%20just%20has%20to%20be%20a%20salted%20caramel!%3C/p%3E%3Cp%3ERhubarb%20is%20now%20my%20friend.%20The%20snake,%20the%20rabbit,%20the%20tics%20and%20black%20flies%20%E2%80%A6%20not%20so%20much!%3C/p%3E%3Cp%3EIn%20a%20heavy-bottomed%20pot%20over%20medium%20heat,%20whisk%20together%20the%20milk,%203/4%20cup%20sugar,%20the%20salt,%20the%20vanilla%20bean%20seeds%20and%20its%20pod.%20Simmer%20gently%20until%20sugar%20dissolves,%20about%205%20minutes.%20Remove%20from%20heat,%20cover,%20and%20steep%2030%20minutes.%20Discard%20the%20vanilla%20pod%20and%20return%20mixture%20to%20a%20bare%20simmer.%3C/p%3E%3Cp%3EPlace%20the%20yolks%20in%20a%20large%20bowl.%20Slowly%20whisk%20in%20hot%20milk%20mixture.%20Scrape%20the%20custard%20back%20into%20the%20pot%20and%20cook%20over%20medium-low%20heat,%20stirring%20constantly,%20until%20mixture%20is%20thick%20enough%20to%20coat%20the%20back%20of%20a%20spoon,%20about%205%20minutes.%20Strain%20through%20a%20fine-mesh%20sieve%20into%20a%20bowl.%20Whisk%20in%20sour%20cream.%20Chill%20at%20least%203%20hours%20or%20overnight.%3C/p%3E%3Cp%3EIn%20a%20saucepan,%20combine%20the%20rhubarb%20with%201%20cup%20sugar.%20Simmer%20until%20rhubarb%20is%20just%20tender%20and%20has%20begun%20releasing%20its%20juices,%20but%20has%20not%20started%20to%20fall%20apart,%204%20to%205%20minutes.%20Using%20a%20slotted%20spoon,%20transfer%20rhubarb%20to%20a%20bowl.%20Continue%20to%20simmer%20the%20juices%20until%20syrupy,%205%20to%2010%20minutes%20more.%20Pour%20the%20syrup%20over%20the%20rhubarb.%20Cool%20completely.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20and%20preferably%20nonstick%20skillet,%20sprinkle%202%20tablespoons%20sugar%20over%20medium%20heat.%20When%20it%20begins%20to%20melt%20and%20lightly%20color,%20sprinkle%20in%202%20more%20tablespoons%20and%20start%20swirling%20pan%20to%20help%20evenly%20distribute%20sugar.%20Add%20the%20final%202%20tablespoons%20and%20cook,%20swirling%20pan%20until%20all%20the%20sugar%20has%20melted.%20Let%20cook,%20swirling%20occasionally,%20until%20the%20sugar%20syrup%20caramelizes%20and%20turns%20dark%20brown.%20Pour%20in%20the%20heavy%20cream%20and%202%20tablespoons%20water%20(stand%20back;%20it%20may%20splatter).%20Simmer,%20stirring%20with%20a%20heatproof%20rubber%20spatula%20until%20smooth.%20Cool%20completely.%3C/p%3E%3Cp%3EPour%20the%20custard%20base%20into%20an%20ice%20cream%20machine%20and%20churn.%20Add%20rhubarb%20compote%20for%20the%20last%20minute%20of%20churning.%3C/p%3E%3Cp%3EScrape%20a%20quarter%20of%20the%20caramel%20into%20the%20bottom%20of%20a%20freezer-proof%20quart%20container.%20Top%20with%20a%20quarter%20of%20the%20ice%20cream.%20Repeat%20layering%20until%20all%20of%20the%20caramel%20and%20ice%20cream%20has%20been%20used,%20ending%20with%20the%20ice%20cream.%20Freeze%20until%20firm%20for%20at%20least%202%20hours%20and%20up%20to%201%20week.%3C/p%3E%3Cp%3ENOTE:%20ONE%20WEEK!?%20HAHAHAHA!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
