- Cut and rinse the potatoes (I left the skin on them). Boil them in sufficient salted water until they are fork tender.
- Saute/fry the shallot in the extra virgin olive oil for 1 - 2 min add the chopped garlic and saute/fry for another couple of min till lightly browned. Add the rosemary (I ran the rosemary thru an electric coffee mill to mince it finely). Saute/fry another 30 seconds.
- Drain potatoes and return to same pot to keep hot while you mash them.
- Add sufficient margarine and lowfat milk to make the potatoes to your favorite consistency (I like them with some lumps). Add in the shallot mix, mix well.
- This tasted very good!! Quick and easy and a change from plain ol' mashed potatoes.
