I have to give my son credit for inspiring me to make this recipe. Brian doesn't have cable television, but he can receive PBS television. As a result of this, he watches a lot of cooking shows. My son and I like Every Day Food (Martha Stewart) because the recipes are very simple and don't involve complicated ingredients or instructions. "Mom, please make this!" he pleaded, as we watched this episode together. Last weekend, it was raining and cold. This was the perfect day to make a braised dinner. %20because%20the%20recipes%20are%20very%20simple%20and%20don't%20involve%20complicated%20ingredients%20or%20instructions.%20%20%22Mom,%20please%20make%20this!%22%20he%20pleaded,%20as%20we%20watched%20this%20episode%20together.%20%20Last%20weekend,%20it%20was%20raining%20and%20cold.%20This%20was%20the%20perfect%20day%20to%20make%20a%20braised%20dinner.%20%20What%20I%20love%20about%20braising%20is%20that%20I%20can%20buy%20inexpensive%20cuts%20of%20meat%20and%20cook%20it%20for%20several%20hours,%20resulting%20in%20tender%20meat%20and%20tasty%20sauces.%20Sounds%20good?%20%20I%20found%20a%206%20pound%20chunk%20of%20brisket%20for%20$3.50%20pound.%20%20I%20decided%20to%20use%201/3%20of%20this%20chunk%20of%20meat%20and%20freeze%20two%20more%20portions%20for%20a%20later%20time.%3C/p%3E%3Cp%3EThe%20ingredients%20list%20is%20short%20and%20simple.%20%20You%20need%20shallots.%20%20I%20love%20me%20some%20shallots!%20They're%20sweeter%20than%20traditional%20onions,%20and%20I%20always%20have%20them%20in%20my%20fridge.%3C/p%3E%3Cp%3EYou%20also%20need%20garlic.%3C/p%3E%3Cp%3EJust%20smash%20the%20garlic%20and%20peel%20off%20the%20paper%20peels.%20%20I%20cut%20my%20shallots%20chunky%20style.%20%20We're%20about%20to%20sear%20the%20meat.%20%20I%20have%20a%20friend%20who%20says%20she's%20can't%20sear%20meat.%20She%20says%20it%20never%20turns%20golden%20brown.%20My%20best%20advice%20is%20this--%20pat%20the%20meat%20as%20dry%20as%20you%20can.%20No%20moisture,%20or%20it%20will%20steam.%20%20I%20love%20my%20Dutch%20Oven,%20because%20I%20can%20turn%20the%20burner%20to%20screaming%20HOT%20and%20that's%20what%20you%20need.%20%20HOT!%20%20Here%20we%20go....%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20In%20a%20large%20Dutch%20oven%20or%20heavy%20pot,%20heat%202%20tablespoons%20oil%20over%20medium-high.%20Season%20brisket%20with%20salt%20and%20pepper;%20in%20batches,%20cook,%20turning%20occasionally,%20until%20dark%20brown%20on%20all%20sides,%20about%2020%20minutes%20total.%20Transfer%20brisket%20to%20a%20plate%20and%20discard%20fat%20from%20pot.%20%20NOTE:%20I%20cooked%20my%202%20pound%20chunk%20of%20meat%20in%20one%20large%20slice.%20I%20didn't%20feel%20a%20need%20to%20cut%20it,%20but%20it's%20up%20to%20you.%20Look%20at%20all%20that%20fond!%3C/p%3E%3Cp%3EColor%20=%20flavor.%3C/p%3E%3Cp%3EReturn%20the%20pot%20to%20high%20heat%20and%20add%202%20teaspoons%20oil%20and%20shallots;%20cook,%20stirring,%20until%20shallots%20are%20browned,%203%20minutes.%20Add%20garlic%20and%20cook,%20stirring,%20until%20fragrant,%201%20minute.%20%20We're%20about%20to%20deglaze%20all%20this%20tasty%20goodness.%20That%20translates%20to,%20adding%20liquid%20to%20loosen%20up%20all%20the%20brown%20bits%20to%20make%20an%20amazing%20sauce.%20%20You%20could%20use%20beef%20stock,%20if%20you%20don't%20want%20to%20use%20wine.%20Me?%20I%20buy%20reasonably%20priced%20wine%20at%20Trader%20Joe's.%20I%20never,%20ever%20buy%20cooking%20wine--%20it's%20salty%20and%20it's%20nasty!%20%20I%20grabbed%20a%20bottle%20of%20Merlot%20from%20my%20stash%20of%20wines%20reserved%20for%20braising....%3C/p%3E%3Cp%3EAdd%20wine%20and%20simmer%20rapidly%20until%20reduced%20by%20three-fourths,%20about%2015%20minutes.%3C/p%3E%3Cp%3ETIP:%20I%20dip%20the%20end%20of%20my%20cooking%20spoon%20to%20leave%20a%20%22mark%22%20where%20the%20liquid%20started%20from.%20Now,%20when%20I%20dip%20the%20spoon,%20after%20reducing%20the%20liquid,%20I%20can%20see%20that%20it's%20reduced%20enough.%3C/p%3E%3Cp%3EBecause%20I%20have%20an%20herb%20garden,%20I%20decided%20to%20pick%20some%20Italian%20Parsley,%20marjoram%20and%20oregano%20and%20I%20tied%20it%20up%20and%20put%20it%20into%20the%20sauce.%20%20I%20do%20this,%20because%20I%20think%20it%20adds%20extra%20flavor%20to%20sauces.%20Return%20beef%20to%20pot%20and%20add%20just%20enough%20water%20to%20cover%20meat%20(5%20to%206%20cups).%20Bring%20to%20a%20boil,%20cover,%20then%20place%20pot%20in%20oven.%20Cook%20until%20beef%20is%20tender,%203%20%C2%BD%20to%204%20hours.%20%20NOTE:%20You%20could%20use%20a%20slow%20cooker,%20but%20I%20was%20planning%20to%20be%20home%20anyway.%20%20In%20my%20very%20honest%20opinion,%20I%20find%20braising%20in%20a%20Dutch%20Oven%20to%20be%20my%20preferred%20method.%20Somehow,%20I%20think%20the%20meat%20come%20out%20more%20tender.%20%20%20The%20next%20photo%20isn't%20my%20best%20quality.%20The%20sun%20had%20gone%20down,%20and%20my%20natural%20lighting%20was%20pretty%20much%20done...%3C/p%3E%3Cp%3EI%20wanted%20to%20show%20you%20how%20much%20the%20sauce%20had%20reduced!%20%20I%20took%20a%20taste,%203/4%20of%20the%20way%20through%20braising,%20and%20found%20the%20sauce%20to%20be%20missing%20something.%20I%20added%20some%20tomato%20paste%20(about%201%20Tablespoon)%20and%20some%20thyme.%3C/p%3E%3Cp%3EI%20removed%20the%20meat,%20and%20added%20some%20beef%20stock%20to%20the%20sauce...%3C/p%3E%3Cp%3EThis%20is%20the%20reward%20for%20waiting%20HOURS%20for%20a%20meal%20to%20be%20braised.%20The%20sauce%20was%20so%20flavorful.%20I%20liked%20the%20r
