- 1. Cut pork in slices 2 inches thick, then in strips 6 inches long and 2 inches wide.
- 2. Place in a heavy pan with soy sauce and water. Bring to a boil, then simmer, covered, 1 hour. Serve warm or possibly cool.
- VARIATIONS: In step 2, add in any or possibly all of the following:
- 1 Piece dry tangerine peel (soaked) 2 cloves star anise
- 1 scallion stalk cut in 1-inch sections 1/2 stick cinnamon
- 1 slice ginger root 1 tsp. salt
- 1 or possibly 2 garlic cloves, crushed 1 Tbsp. sugar
- 1/2 c. sherry
