- Whole Grain, "South Beach Friendly", Delicious Oatmeal Raisin Nut Cookies
- Makes about 24
- 1 stick butter, softened
- 1/2 cup Turbinado sugar
- 1/4 cup granulated Splenda® for baking
- 1 large egg
- 1 1/2 tsp. pure vanilla extract
- 1 cup whole wheat flour
- 3/4 tsp. baking powder
- 1 cup oatmeal
- 1/2 tsp. ground cinnamon
- 1/2 cup raisins
- 3/4 cup chopped walnuts
- 1/2 cup mini chocolate chips (optional-I threw these in special for my birthday knowing they are cheating a little)
