Are you guys having dreary weather where you live? I hope that none of you are experiencing the hurricane and have lost power.
Here in Wilmington, we had a day full of steady rain with momentary downpours scattered throughout. Luckily Unluckily, Tuesday is my busiest day of classes and so I had no choice but to brave the rain.
In the end it wasn’t so bad. I pulled on my Wellies and swam to my classes.
These turned out to be a great idea because UNCW floods very easily…and they’re perfect for splashing in puddles!
By the end of the day all I wanted was to pull on some comfy pants and eat a big bowl of warm soup! MOH and I were on (cutest) baby sitting duty, so a simple soup was perfect.

%20baby%20sitting%20duty,%20so%20a%20simple%20soup%20was%20perfect.%3C/p%3E%3Cp%3EAnd%20being%20me,%20I%20had%20to%20spice%20it%20up%20a%20bit!%3C/p%3E%3Cp%3ERoasted%20Red%20Pepper%20Tomato%20Soup%20with%20White%20Beans%20and%20Garlicky%20Kale%3C/p%3E%3Cp%3EI%20used%20the%20Pacific%20Brand%20Roasted%20Red%20Pepper%20Tomato%20Soup%20as%20the%20base.%20While%20that%20heated%20in%20a%20saucepan,%20I%20made%20the%20White%20Beans%20and%20Kale.%3C/p%3E%3Cp%3EIn%20a%20saut%C3%A9%20pan,%20I%20heated%20one%20tbsp.%20olive%20oil%20over%20medium%20heat.%20I%20added%20two%20cloves%20of%20chopped%20garlic%20and%20stirred%20for%20one%20minute.%20Then%20I%20added%20in%20one%20can%20of%20White%20Beans%20%E2%80%93%20drained.%20Stirred%20and%20then%20allowed%20to%20cook%20for%203-5%20minutes.%20Then%20I%20added%20in%20about%201/4%20cup%20water%20to%20the%20bottom%20of%20the%20pan%20and%20one%20bunch%20of%20chopped%20kale%20(stems%20removed).%20Stirred%20and%20then%20added%20the%20lid%20to%20let%20the%20kale%20steam%20and%20wilt.%3C/p%3E%3Cp%3EI%20stirred%20every%205%20minutes%20or%20so,%20so%20that%20the%20beans%20didn%E2%80%99t%20burn.%20Once%20I%20felt%20like%20the%20kale%20had%20wilted,%20I%20added%20the%20mixture%20to%20the%20soup%20pot%20and%20let%20the%20flavors%20meld%20on%20low%20heat%20for%2015%20minutes.%3C/p%3E%3Cp%3EServed%20with%20a%20side%20of%20cheese%20toast%20and%20avocado%E2%80%A6%3C/p%3E%3Cp%3Eand%20Honey%20Boo%20Boo.%3C/p%3E%3Cp%3EDon%E2%80%99t%20judge!%3C/p%3E%3Cp%3EThis%20soup%20turned%20out%20to%20be%20really%20delicious%20and%20just%20what%20we%20needed%20after%20such%20a%20rainy%20day.%20I%20can%20pretty%20much%20guarantee%20that%20you%20will%20be%20seeing%20the%20above%20soup%20a%20lot%20this%20winter!%20Super%20warm%20and%20cozy!%3C/p%3E%3Cp%3ESpeaking%20of%20warm%20and%20cozy:%3C/p%3E%3Cp%3EHave%20you%20ever%20seen%20a%20cuter%20more%20snugglier%20baby?!?!%3C/p%3E%3Cp%3ESo%20stinkin%E2%80%99%20cute.%20MOH%20and%20I%20were%20pretty%20excited%20about%20babysitting.%20We%20were%20even%20able%20to%20give%20her%20a%20bath.%20Pretty%20much%20precious.%3C/p%3E%3Cp%3EHappy%20Wednesday!!%3C/p%3E%3Cp%3EI%20made%20it%20to%20the%20gym%20this%20morning!%20I%20basically%20tricked%20myself%20while%20I%20was%20still%20groggy%20and%20pulled%20my%20workout%20clothes%20on%20first%20thing.%20I%20then%20gave%20myself%20a%205%20minute%20time%20limit%20to%20get%20out%20the%20door.%20It%20worked!%3C/p%3E){kind=link}
