Рецепт quinoa veggie stuffed bell peps
Let's get ancient with today's recipe - quinoa. A grain that's been working for the last 3,000 years? It's got to have some serious food power. In respects of the Around the Plate's 'Eat More Veggies' Challenge here's another simple way to get yo veggie on.
Ingredients//
2 green bell peppers
Frozen mixed veg - I had peas, corn, & carrots in the one I used
Quinoa
Shredded Chicken - can omit if vegetarian
Directions//
Cook quinoa - 1 part quinoa/ 2 parts water - I use a little EVOO in the pot. I cooked 1 cup so I had some leftovers, if you just want to make enough for the peps I'd go with a 1/2 cup uncooked quinoa - it expands after boiling it
Boil mixed veg - 12 minutes - until soft and cooked through
Shredded chicken - mine was made in the crockpot in a big batch - you can sauté some cubed boneless chicken breast in EVOO & dice it up for the top of the quinoa in the bell pep
- Cut the tops of the bell peppers - and trim the insides out so there is no white
- Place the hollowed bell peppers in the oven for 20 minutes on 350F or 175C
- Once quinoa is boiled - most the water will be absorbed - drain and rinse the grain in hot water
- Take the peppers out and fill them with the quinoa, then chicken, then mixed veg
