- Bring the quinoa, water, first measure of cinnamon, brown sugar and nutmeg to a boil.
- Cook until the quinoa is tender, about 15 minutes.
- Cool to room temp.
- While the quinoa is cooking, toast the nuts you intend to use unless they are already roasted; most nuts toast at 350 for about 10 minutes.
- Combine the cool quinoa, oats and remaining ingredients, except for the mix-ins, together in a bowl.
- Spread the quinoa and oats into a single layer on a baking sheet.
- Bake for 40 minutes at 350, stirring every 10 minutes until the mix is crunchy and golden brown.
- When the mixture is tone and has cooled slightly, stir in your mix-ins.
