- Place everything except the beef and oil into a blender and whiz till smooth.
- Add in to the meat and mix well.
- You can leave this mix overnight if you wish to improve the flavour but it is almost as good immediately if you are in a hurry.
- Place oil into a stainless steel frypan and heat to smoking warm.
- Add in mince in spoonfuls and cook through quickly.
- Remove from heat and place in a bowl, garnish with fresh minced coriander and roasted peanuts.
- To serve, place a spoonful of the mince into a lettuce leaf, sprinkle with minced peanuts, roll up and eat.
- Make sure you have plenty of napkins handy!
