- 2/3 c. butter or possibly margarine
- 2/3 c. brown sugar packed
- 2 x Large eggs
- 1 c. canned pumpkin
- 1/2 c. light molasses
- 1/2 c. lowfat milk
- 2Â 1/2 c. flour
- 1 Tbsp. fresh grated ginger or possibly 1 teaspoon dry grnd ginger
- 1Â 1/2 tsp cinnamon
- 1 tsp baking pwdr
- 1 tsp baking soda
- Â Â orange oil (optional)

- Cream butter and brown sugar in the mixer. Add in Large eggs and pumpkin and mix a couple min. Add in remaining ingredients and beat till smooth. Spread mix in a 9 X 13 pan sprayed with nonstick spray and bake at 350F for 35-40 min.
