Pumpkin Alfredo

This is a pumpkin variation of a traditional Italian dish that could easily go with a Holiday meal. We enjoy this with shrimp since the flavors complement each other well, but I believe it would go very well with turkey or ham too!

Ингредиенты

  • 1 tablespoon margarine
  • 1 tablespoon minced garlic
  • ¾ cup canned pumpkin
  • 1 whole nutmeg to grate several strokes
  • ½ teaspoon salt
  • dash pepper
  • 1½ cup whipping cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 16 oz box fettuccine pasta, cooked

  1. Melt the margarine on medium heat and sauté the garlic until soft.
  2. Stir in the pumpkin and grate a little nutmeg into the pot.
  3. Stir for 1-2 minutes.
  4. Stir in the whipping cream and bring to a low simmer.
  5. Stir frequently, letting thicken for 5-6 minutes.
  6. Stir in the Parmesan cheese and stir frequently until desired thickness.
  7. Serve with 1 pound box of cooked fettuccine.
  8. Serves 6
