Not long ago, I wasn't crazy about the idea of using bacon in any kind of dessert. Mixing meat with sweets just seemed so wrong. Then last June I had the opportunity to try Bacon Ice Cream made by Executive Chef Julian Grainger of the Minneapolis Hilton Hotel....it was topped with a Bacon Lollipop (!) and it was fabulous. %20and%20it%20was%20fabulous.%20Still,%20I%20was%20hesitant%20to%20try%20it%20at%20home.%20An%20Egg%20and%20Bacon%20Improv%20theme%20was%20just%20the%20ticket%20to%20get%20me%20motivated....it%20was%20time%20to%20try%20Candied%20Bacon.%3C/p%3E%3Cp%3EI%20searched%20the%20Internet%20for%20the%20bacon%20recipe%20and%20was%20most%20inspired%20by%20the%20one%20posted%20by%20Recipe%20Girl.%20Simply%20mix%20some%20brown%20sugar%20and%20cinnamon%20in%20a%20bowl%20and%20coat%20both%20sides%20of%20the%20bacon%20slices.%20Put%20an%20oven%20safe%20rack%20on%20top%20of%20a%20parchment%20lined%20baking%20sheet;%20spray%20it%20with%20cooking%20spray.%20Arrange%20the%20bacon%20slices%20on%20the%20rack%20and%20bake%20at%20350%20degrees%20F.%20Since%20I%20only%20had%20thick%20slices%20of%20bacon,%20I%20baked%20mine%20for%20just%20about%2030%20minutes.%20Watch%20it%20carefully%20near%20the%20end,%20to%20make%20sure%20the%20bacon%20doesn't%20burn.%3C/p%3E%3Cp%3EFrankly,%20I%20had%20no%20idea%20how%20I%20was%20going%20to%20use%20the%20bacon%20after%20I%20made%20it...the%20dessert%20just%20evolved%20after%20these%20beauties%20emerged%20from%20the%20oven.%3C/p%3E%3Cp%3EOne%20of%20the%20best%20%22eggy%22%20desserts%20I%20can%20think%20of%20are%20cream%20puffs.%20Made%20from%20just%20a%20little%20water,%20butter,%20flour,%20and%20eggs,%20they%20are%20not%20only%20easy%20to%20make,%20but%20they%20look%20impressive%20as%20well.%20They%20can%20be%20filled%20with%20whipped%20cream%20or%20custard%20or%20chocolate%20mousse.%20If%20you%20fill%20them%20with%20a%20scoop%20of%20ice%20cream,%20you%20get%20to%20call%20them%20%22profiteroles%22%20and%20you%20are%20immediately%20elevated%20to%20the%20status%20of%20fancy%20schmancy%20baker.%20Look%20at%20how%20easy%20these%20things%20are%20to%20make:%3C/p%3E%3Cp%3ESimply%20combine%201%20cup%20of%20water,%201/2%20cup%20of%20butter%20(I%20used%20unsalted),%20and%20a%20pinch%20of%20salt%20into%20a%20medium%20sized%20saucepan.%20Bring%20it%20to%20a%20boil%20and%20add%201%20cup%20of%20flour%20all%20at%20once.%20Stir%20vigorously%20until%20the%20mixture%20forms%20a%20ball.%20Let%20this%20cool%20for%205%20minutes.%3C/p%3E%3Cp%3EThe%20hardest%20part%20is%20the%20workout%20your%20arm%20gets%20from%20beating%20the%20eggs%20in....%3C/p%3E%3Cp%3EAfter%20the%20mixture%20has%20cooled%20for%205%20minutes,%20add%204%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20The%20mixture%20should%20be%20smooth%20and%20shiny%20when%20you%20are%20done.%3C/p%3E%3Cp%3ENext,%20use%20a%20cookie%20scoop%20to%20drop%20the%20batter%20onto%20a%20large%20baking%20sheet%20lined%20with%20parchment%20paper%20or%20a%20Silpat.%20Bake%20for%20about%2030%20minutes,%20or%20until%20they%20are%20puffed%20and%20browned.%20Immediately%20cut%20a%20small%20hole%20in%20each%20one%20to%20allow%20steam%20to%20escape.%3C/p%3E%3Cp%3EAren't%20they%20pretty?%20They%20freeze%20well,%20too...bag%20up%20what%20you%20don't%20use%20and%20save%20them%20for%20a%20quick%20emergency%20dessert.%3C/p%3E%3Cp%3EWhen%20they%20are%20cool,%20just%20cut%20the%20tops%20off%20and%20pluck%20out%20some%20of%20the%20insides.%20Now%20you%20have%20the%20perfect%20vessel%20for%20the%20good%20stuff.%20You%20could%20even%20make%20little%20savory%20tarts%20by%20filling%20them%20with%20chicken...hmmm...pot%20pies?%3C/p%3E%3Cp%3EMeh,%20it%20was%20Sunday%20afternoon%20and%20I%20was%20feeling%20a%20bit%20lazy,%20so%20I%20just%20filled%20these%20with%20vanilla%20ice%20cream.%20Now%20I'm%20thinking%20that%20some%20Sweet%20Potato%20Ice%20Cream%20might%20be%20good.....%3C/p%3E%3Cp%3EAt%20any%20rate,%20it%20still%20needed%20a%20topping,%20and%20since%20bacon%20and%20maple%20are%20such%20a%20good%20combination,%20I%20turned%20to%20the%20Pioneer%20Woman's%20Whiskey%20Maple%20Cream%20Sauce.%20If%20you%20haven't%20made%20this%20yet,%20go%20do%20it%20now.%20I've%20used%20this%20a%20bunch%20of%20times%20over%20apple%20pie%20and%20bread%20pudding.%20It%20is%20life%20altering.%20Btw,%20one%20tablespoon%20of%20whiskey%20is%20plenty--it%20gives%20it%20just%20the%20right%20boozy%20flavor%20without%20overpowering.%3C/p%3E%3Cp%3EFill%20your%20profiteroles%20with%20a%20scoop%20of%20ice%20cream,%20pour%20some%20warm%20Whiskey%20Maple%20Cream%20Sauce%20over%20it,%20and%20crumble%20some%20of%20that%20Candied%20Bacon%20on%20top...that%20is%20if%20you%20have%20any%20left.%3C/p%3E%3Cp%3ENow%20go%20see%20what%20everyone%20else%20is%20making%20with%20Eggs%20and%20Bacon.%3C/p%3E){kind=link}
