.%3C/p%3E%3Cp%3EAnd%20have%20you%20ever%20started%20making%20a%20recipe%20and%20realized%20halfway%20through%20that%20there%E2%80%99s%20something%20off%20with%20it?%20Maybe%20it%E2%80%99s%20missing%20an%20ingredient,%20or%20an%20important%20instruction?%20Well,%20that%E2%80%99s%20also%20what%20happened%20here.%20Although%20I%20had%20already%20started,%20I%20switched%20gears%20and%20started%20following%20this%20much%20better%20recipe,%20with%20a%20number%20of%20alterations%20I%20had%20already%20accidentally%20made.%3C/p%3E%3Cp%3EI%20was%20so%20happy%20I%20acted%20impulsively%20and%20made%20these%20pretzel%20rolls.%20Pretzel%20rolls,%20people!%20They%20taste%20like%20a%20soft%20pretzel%20but%20act%20as%20a%20dinner%20roll!%20They%E2%80%99re%20unusual%20and%20impressive%20and%20downright%20delicious.%20They%20take%20a%20little%20time%20and%20effort,%20between%20the%20rising%20time%20and%20the%20boiling%20then%20baking,%20but%20it%E2%80%99s%20worth%20it.%20Also,%20the%20rolls%20really%20are%20best%20fresh%20out%20of%20the%20oven%20and%20even%20though%20we%20ate%20them%20for%20breakfast%20the%20next%20day,%20even%20by%20then%20they%20could%20do%20with%20toasting.%20I%20froze%20the%20extras%20and%20can%E2%80%99t%20wait%20to%20pop%20them%20in%20the%20oven%20again!%3C/p%3E%3Cp%3ECombine%20the%20milk%20and%20the%20yeast%20in%20a%20large%20bowl%20(or%20the%20bowl%20of%20a%20stand%20mixer)%20and%20let%20rest%2010%20minutes%20until%20foamy.%20(If%20it%20does%20not%20foam%20then%20discard%20and%20start%20again%20with%20fresh%20yeast.)%3C/p%3E%3Cp%3EAdd%20the%20sugar,%20flour,%20salt,%20and%20melted%20butter%20and%20knead%20(or%20mix%20with%20the%20dough%20hook)%20until%20thoroughly%20combined,%20and%20the%20dough%20comes%20together%20and%20is%20rather%20silky%20%E2%80%93%20but%20not%20sticky%20%E2%80%93%20to%20the%20touch.%3C/p%3E%3Cp%3ECover%20with%20a%20dish%20towel%20and%20allow%20to%20rise%20in%20a%20warm%20place%20for%201%20hour,%20or%20until%20doubled%20in%20bulk.%20Punch%20down%20and%20turn%20onto%20a%20lightly%20floured%20surface.%20Line%20two%20sheet%20pans%20with%20parchment%20paper%20or%20Silpat%20mats.%3C/p%3E%3Cp%3ECut%20the%20dough%20into%2018%20even%20pieces.%20Shape%20into%20smooth%20dough%20balls.%20Space%20evenly%20on%20the%20prepared%20sheet%20pans,%20leaving%20at%20least%201-inch%20between%20each%20roll.%20Cover%20with%20a%20tea%20towel%20or%20a%20light%20film%20of%20plastic%20wrap%20and%20let%20rise%20in%20a%20warm%20place%20for%2030%20minutes%20until%20doubled.%20Meanwhile,%20preheat%20the%20oven%20to%20425%C2%B0F.%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20bring%202%20quarts%20of%20water%20to%20a%20low%20boil.%20Add%20the%20baking%20soda%20and%20lower%20heat%20to%20a%20simmer.%20Carefully%20slip%20the%20rolls,%20a%20few%20at%20a%20time,%20into%20the%20poaching%20liquid.%20Poach%20for%2030%20seconds%20then%20carefully%20turn%20the%20roll%20over%20in%20the%20liquid.%20Poach%20other%20side%20for%2030%20seconds%20then%20remove%20with%20a%20slotted%20spoon%20to%20the%20same%20prepared%20sheet%20pans.%20Repeat%20with%20the%20remaining%20rolls,%20leaving%20at%20least%201-inch%20between%20rolls%20for%20baking.%3C/p%3E%3Cp%3EWith%20a%20pastry%20brush,%20glaze%20each%20roll%20completely%20with%20the%20lightly%20beaten%20egg%20making%20sure%20to%20coat%20all%20sides%20completely.%20Top%20each%20roll%20with%20a%20sprinkle%20of%20coarse%20salt.%20With%20a%20sharp,%20straight%20knife,%20cut%20a%20slash%20or%20%E2%80%9CX%E2%80%9D%20in%20the%20top%20of%20each%20roll.%3C/p%3E%3Cp%3EBake%20the%20rolls%20for%2015%20to%2020%20minutes,%20rotating%20the%20pans%20halfway%20through%20for%20even%20browning.%20Allow%20to%20cool%20slightly%20before%20serving.%3C/p%3E){kind=link}
