- 1 teaspoon pure vanilla extract
- 1/2 teaspoon coconut extract
- 1 cup cooked and cooled quinoa
- 1 cup white whole wheat flour
- 1 cup whole wheat pastry flour
- 1/2 cup ground flax meal
- 1 cup regular rolled oats (not quick oats)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 1 cup dried apricots, chopped
- 1 cup roasted unsalted whole cashews, chopped
- Icing:
- 1 square of white melting chocolate
- 1 tablespoon half and half
- 1/2 teaspoon coconut extract
