%20in%20a%20little%20pouch%20of%20parchment%20paper.%20You%20add%20whatever%20spices,%20herbs%20or%20flavorings%20you%20like%20and%20the%20food%20ends%20up%20steaming%20in%20its%20little%20pocket%20in%20the%20oven,%20keeping%20the%20flesh%20moist%20and%20tender%20and%20flavoring%20it%20with%20whatever%20aromatics%20you've%20chosen%20to%20add.%3C/p%3E%3Cp%3EI%20have%20clipped%20a%20number%20of%20different%20recipes%20that%20use%20en%20papillote%20over%20the%20years%20but%20had%20never%20actually%20tried%20one%20out%20before%20this.%20I%20would%20definitely%20do%20this%20again%20--%20not%20only%20is%20it%20simple%20and%20easy,%20I%20also%20love%20the%20aesthetic%20of%20these%20neat%20little%20packages%20of%20yumminess.%20I%20could%20see%20this%20being%20a%20fun%20thing%20to%20make%20for%20a%20dinner%20party%20--%20each%20guest%20gets%20their%20own%20little%20pouch%20of%20delicious,%20steaming%20food.%3C/p%3E%3Cp%3EI%20used%20unbleached%20parchment%20paper%20since%20bleach%20just%20can't%20be%20a%20good%20thing%20when%20it%20comes%20to%20steaming%20food...%3C/p%3E%3Cp%3EAlthough%20I%20went%20with%20a%20fairly%20traditional,%20French-inspired%20selection%20of%20herbs%20and%20flavorings%20for%20this%20first%20trial%20run,%20I%20am%20excited%20to%20try%20out%20a%20bunch%20more%20exotic%20pairings%20like%20mahi%20mahi%20fillets%20with%20coconut%20milk%20and%20red%20curry%20paste%20-%20simple%20and%20delicious!%3C/p%3E%3Cp%3EHere's%20a%20little%20photo%20tour%20of%20the%20process.%3C/p%3E%3Cp%3EI%20began%20by%20laying%20down%20a%20bed%20of%20lemon%20slices%20--%20but%20I%20have%20not%20included%20this%20step%20in%20my%20directions%20as%20I%20felt%20it%20made%20the%20chicken%20a%20little%20too%20bitter%20for%20my%20taste%20--%20just%20stick%20with%20the%20lemon%20juice.%3C/p%3E%3Cp%3ENext,%20I%20laid%20the%20chicken%20breasts%20on%20top%20of%20the%20lemons%20and%20shallots%20and%20topped%20it%20with%20more%20shallots,%20herbs,%20olive%20oil,%20white%20wine,%20mustard,%20salt%20and%20pepper.%3C/p%3E%3Cp%3EThe%20next%20step%20was%20to%20bundle%20the%20chicken%20breasts%20up%20into%20neat%20little%20parchment%20paper%20packages.%3C/p%3E%3Cp%3EThen,%20into%20the%20oven%20they%20went.%20Half%20an%20hour%20or%20so%20later,%20out%20they%20came,%20all%20steaming%20and%20slightly%20crisped.%3C/p%3E%3Cp%3ENow%20all%20that%20was%20left%20was%20to%20unwrap%20the%20little%20packages%20of%20poulet.%3C/p%3E%3Cp%3EAnd%20eat%20them,%20of%20course!%20Bon%20appetit.%3C/p%3E%3Cp%3EPoulet%20en%20Papillote%20--%20Chicken%20Baked%20in%20Parchment%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20375%20degrees.%20Rinse%20the%20chicken%20breasts%20and%20pat%20dry.%3C/p%3E%3Cp%3E2.%20Mix%20the%20olive%20oil%20with%20the%20mustard,%20garlic,%20lemon%20juice,%20wine,%20and%20some%20salt%20and%20pepper.%20On%20a%20heavy%20baking%20sheet,%20lay%20out%204%20sheets%20of%20parchment%20paper%20roughly%2010%20inches%20square.%20Fold%20each%20sheet%20in%20half,%20making%20a%20crease%20to%20make%20sure%20that%20the%20fold%20sticks.%20Spoon%20a%20little%20of%20the%20oil/mustard/garlic%20mixture%20onto%20one%20half%20of%20each%20square%20of%20parchment%20paper%20(place%20it%20where%20you'll%20be%20putting%20the%20chicken%20breast)%20then%20scatter%20the%20sliced%20shallot%20or%20onion%20over%20it%20to%20create%20a%20flavorful%20bed%20for%20the%20chicken%20breast.%3C/p%3E%3Cp%3E3.%20Place%20each%20chicken%20breast%20on%20one%20half%20of%20the%20parchment%20squares%20and%20spoon%20the%20mixture%20equally%20over%20each%20breast.%20Top%20each%20breast%20with%20two%20thyme%20sprigs%20and%20drizzle%20a%20little%20more%20olive%20oil%20over%20top.%3C/p%3E%3Cp%3E4.%20Fold%20the%20parchment%20paper%20over%20and%20crimp%20the%20three%20sides%20together%20to%20make%20a%20neat%20pocket%20that%20will%20keep%20all%20the%20juices%20in%20while%20cooking.%20It%20can%20be%20a%20little%20challenging%20to%20get%20these%20closed%20up%20tight%20but%20keep%20working%20at%20it%20(you%20can%20crimp%20the%20sides%20if%20that%20helps)%20to%20make%20sure%20you've%20got%20a%20good%20seal%20as%20you%20want%20the%20chicken%20breasts%20to%20steam%20in%20these%20little%20pouches.%3C/p%3E%3Cp%3E5.%20Bake%20in%20the%20oven%20for%2025-30%20minutes.%20Remove,%20open%20the%20pouches%20and%20serve!%3C/p%3E){kind=link}
