- Â Â Halved chicken breasts
- Â Â Lump butter
- Â Â Minced garlic
- Â Â Finely minced mixed fresh herbs (parsley, basil, thyme, etc.)
- Â Â Salt and pepper
- Â Â Flour
- 1 x Egg, beaten
- Â Â Few bread crumbs
- Â Â Frying oil
- Â Â Watercress and/or possibly other garnish

- Remove bone and skin from the chicken breasts. Carefully cut in half and place between 2 pcs of waxed paper. Beat with mallet till very thin.
- Remove paper. In the center of each, place a small finger of hard butter and the garlic. Sprinkle with the herbs and season with salt and pepper.
- Roll up and tuck in each end. Roll in flour, then in the beaten egg, roll in bread crumbs and fry in warm oil till golden, 3 to 5 min.
- Remove and drain on paper. Arrange on warm serving dish, garnished with watercress. Serve at once.
