While I was stirring this delicious Potato Leek Soup, my 23 year old son said that he suddenly remembered his Bavarian "Oma" serving him a similar soup when he about 4 years old. (Mutti didn't add leeks, as far as I can recall.) It's funny how certain aromas or recipes can transport us way back in time.
This recipe was inspired by The Haggis and the Herring".This weekend, rainy and cold weather has finally come to stick around my part of California. So, I chose a savory hot soup. This would give me a perfect opportunity to bake bread to go with it.
I usually keep leeks on hand, because they are perfect for making soups. Trader Joe's carries leeks that have already been trimmed, and the price is right.

%20%20It's%20funny%20how%20certain%20aromas%20or%20recipes%20can%20transport%20us%20way%20back%20in%20time.%3C/p%3E%3Cp%3EThis%20recipe%20was%20inspired%20by%20The%20Haggis%20and%20the%20Herring%22.This%20weekend,%20rainy%20and%20cold%20weather%20has%20finally%20come%20to%20stick%20around%20my%20part%20of%20California.%20So,%20I%20chose%20a%20savory%20hot%20soup.%20%20This%20would%20give%20me%20a%20perfect%20opportunity%20to%20bake%20bread%20to%20go%20with%20it.%3C/p%3E%3Cp%3EI%20usually%20keep%20leeks%20on%20hand,%20because%20they%20are%20perfect%20for%20making%20soups.%20%20Trader%20Joe's%20carries%20leeks%20that%20have%20already%20been%20trimmed,%20and%20the%20price%20is%20right.%3C/p%3E%3Cp%3EI%20like%20to%20split%20them%20in%20half...%3C/p%3E%3Cp%3E...the%20cut%20them%20into%20half%20moons.%20.%20Sometimes%20soil%20hides%20inside%20leeks,%20so%20I%20carefully%20wash%20them,%20then%20strain%20them.%3C/p%3E%3Cp%3EI%20used%20my%20mandolin%20to%20easily%20slice%20a%20large%20onion%20and%20three%20Russet%20potatoes,%20nice%20and%20thin.%20In%20a%20Dutch%20oven,%20you'll%20need%20a%20bit%20of%20olive%20oil%20and%20butter.%20Begin%20to%20saute%20the%20leeks%20and%20onion,%20just%20until%20soft%20(about%205%20minutes).%20%20Next,%20add%202-3%20small%20cloves%20of%20garlic%20and%20cook%20for%20just%20the%20last%20minute.%3C/p%3E%3Cp%3EI%20decided%20to%20add%20thyme%20to%20the%20soup%20recipe.%20%20Fresh%20is%20usually%20my%20go%20to,%20since%20I%20grow%20my%20own.%20But,%20I%20took%20a%20shortcut%20and%20used%20dried%20thyme%20%20How%20much?%20About%20two%20teaspoons.%20%20Give%20it%20a%20stir.%20%20Add%20the%20potatoes.%20%20I%20like%20to%20make%20my%20own%20chicken%20stock,%20but%20there%20is%20no%20shame%20in%20buying%20boxed%20chicken%20broth/stock.%20I%20added%20one%20quart%20of%20chicken%20broth%20to%20the%20sliced%20potatoes.%3C/p%3E%3Cp%3EOne%20of%20my%20favorite%20ingredients%20that%20I%20add%20to%20creamed%20soups%20is%20white%20wine.%20The%20wine%20gives%20a%20nice%20touch%20of%20acidity,%20and%20I%20think,%20enhances%20the%20flavors%20of%20the%20soup.%20%20I%20like%20to%20use%20sauvignon%20blanc,%20as%20my%20cooking%20wine%20(or%20dry%20vermouth).%20%20I%20covered%20the%20soup,%20brought%20it%20to%20a%20simmer%20until%20the%20potatoes%20were%20fork%20tender--%20about%2020-25%20minutes.%20%20At%20this%20point%20you%20could%20mash%20the%20potatoes.%20Or,%20you%20could%20puree%20the%20soup%20in%20a%20blender.%20Me?%20%20My%20immersion%20blender%20is%20one%20of%20my%20favorite%20kitchen%20tools.%20%20I%20like%20to%20puree%20my%20soups%20to%20leave%20a%20bit%20of%20texture.%20%20I%20added%20about%201/4%20cup%20of%20grated%20Parmesan%20cheese.%3C/p%3E%3Cp%3EThen%20I%20tasted%20the%20soup%20and%20added%20a%20little%20%20and%20pepper.%20%20I%20used%20a%20low-sodium%20broth,%20but%20I%20didn't%20want%20to%20add%20salt%20just%20yet.%20%20Why?%20Because%20I'll%20be%20adding%20Parmesan%20cheese,%20which%20can%20be%20salty%20in%20itself.%20What's%20next?%20Ah,%20heavy%20cream.%20%20What%20can%20one%20say?%20%20It's%20got%20some%20extra%20calories%20and%20fat%20grams.%20%20But,%20it%20leaves%20such%20a%20silky%20and%20creamy%20flavor%20to%20soups.%20%20I%20added%20about%201/2%20cup--%20not%20too%20bad,%20considering%20this%208-10%20cups%20of%20soup.%20Last,%20but%20not%20least,%20I%20add%20a%20little%20salt%20until%20the%20flavors%20all%20seemed%20balanced.%3C/p%3E%3Cp%3EI%20baked%20a%20loaf%20of%20Whole%20Wheat%20Bread,%20and%20decided%20to%20add%20a%20Parmesan%20Crisp%20(that%20I%20buy%20at%20Trader%20Joe's.%20These%20are%20wickedly%20good.)%3C/p%3E%3Cp%3EPhotographing%20a%20white%20soup%20isn't%20very%20easy%20to%20do,%20especially%20when%20you%20have%20white%20dinnerware.%3C/p%3E%3Cp%3EVERDICT:%20%20My%20husband,%20my%20son%20and%20I%20love%20soups.%20%20To%20me,%20they%20are%20the%20ultimate%20in%20comfort%20food.%20%20The%20potatoes%20give%20the%20soup%20a%20lovely%20thick%20viscosity,%20and%20the%20leeks%20and%20onion%20add%20so%20much%20flavor.%20%20The%20thyme,%20I%20think,%20is%20a%20good%20addition.%20The%20wine....oh,%20the%20wine.%20%20You%20don't%20taste%20alcohol.%20White%20wine%20really%20kicks%20up%20the%20flavor%20buds,%20and%20the%20Parmesan%20cheese.%20%20My%20husband%20usually%20reads%20my%20blog%20(hi,%20honey),%20but%20I%20will%20rat%20out%20that%20he%20ate%20three%20bowls%20of%20this%20soup.%20%20I%20ate%20two.%20The%20bread...well,%20I'm%20not%20sayin'%20how%20many%20slices%20of%20hot,%20fresh%20bread%20and%20butter%20were%20devoured.%20%20The%20bread?%20Oh,%20that%20recipe%20is%20coming%20up%20next.%20(NOTE:%20I%20realized%20that%20I%20had%20made%20and%20blogged%20another%20version%20of%20Potato%20Leek%20Soup,%20in%20April%202009.%20%20That%20version%20uses%20bacon.%20%20It's%20good,%20but%20I%20liked%20this%20version%20better,%20I%20would%20say.)%3C/p%3E%3Cp%3EThe%20next%20day,%20I%20reheated%20the%20last%20bowl%20of%20soup.%20%20I%20made%20chive%20oil,%20and%20I%20think%20that%20added%
