%20just%20for%20this%20dish.%20We%20have%20made%20it%20before%20and%20this%20time%20it%20came%20out%20just%20as%20great%20as%20the%20first%20time%20we%20made%20it.%20The%20second%20time%20we%20made%20it%20we%20used%20the%20wrong%20peppers%20and%20our%20mouths%20almost%20exploded%20(We%20like%20HOT%20but%20this%20was%20too%20much).%20The%20dish%20is%20Rick%20Bayliss's%20Pot%20Roasted%20Pork%20with%20Yellow%20Chiles,%20Plantains%20and%20Piloncillo.%3C/p%3E%3Cp%3EThis%20recipe%20takes%20some%20effort%20but%20it%20is%20well%20worth%20it.%20Of%20course%20it%20entails%20browning%20some%20onions.%3C/p%3E%3Cp%3EWe%20found%20the%20banana%20leaves%20at%20the%20Brazilian%20market%20near%20our%20house.%20You%20can%20find%20them%20in%20many%20ethnic%20grocery%20stores.%3C/p%3E%3Cp%3EThe%20dutch%20oven%20is%20lined%20with%20the%20leaves%20and%20the%20meat%20is%20covered%20and%20cooked%20in%20there%20with%20the%20plantains,%20onions%20and%20liquid%20made%20of%20piloncillo%20(or%20brown%20sugar).%3C/p%3E%3Cp%3EAnd%20here%20ya%20have%20it.%20Pig%20in%20a%20blanket.%20Tricked%20you%20didn't%20I?%3C/p%3E%3Cp%3EWe%20also%20had%20a%20surprise%20guest%20named%20Sam.%20Sam%20was%20a%20charming%20dinner%20guest%20to%20put%20it%20mildly.%20I%20tried%20to%20take%20Sam's%20picture%20so%20I%20could%20give%20credit%20where%20credit%20is%20due%20for%20his%20excellent%20culinary%20expertise.%20He%20wouldn't%20hear%20of%20it.%20He%20prefers%20to%20stay%20anonymous.%20He%20turned%20his%20nose%20up%20at%20our%20dinner%20but%20he%20dined%20to%20the%20tune%20of%20his%20own%20drummer.%3C/p%3E%3Cp%3ESam%20knows%20what%20he%20likes.%20He%20isn't%20a%20guy%20that%20is%20swayed%20easily%20into%20going%20with%20the%20crowd.%3C/p%3E%3Cp%3EI%20wish%20I%20could%20make%20my%20own%20kids%205%20again.%3C/p%3E%3Cp%3EPot%20Roasted%20Pork%20with%20Yellow%20Chiles,%20Plantains%20and%20Piloncillo%3C/p%3E%3Cp%3ERecipe%20from%20Rick%20Bayliss's%20Season%205%20of%20Mexico--One%20Plate%20at%20a%20Time%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EDIRECTIONS%3C/p%3E%3Cp%3EFill%20a%20microwaveable%20measuring%20cup%20with%203/4%20cup%20water.%20Add%20the%20piloncillo%20(or%20brown%20sugar)%20and%20microwave%20on%20high%20for%201%20minute.%20Remove%20and%20let%20stand%20until%20piloncillo%20dissolves,%20about%205%20minutes.%20(The%20brown%20sugar%20will%20dissolve%20more%20quickly.)%3C/p%3E%3Cp%3ERoast%20the%20chiles%20over%20an%20open%20flame%20or%204-inches%20below%20a%20preheated%20broiler%20until%20blackened%20and%20blistered%20all%20over.%20Place%20in%20a%20bowl%20and%20cover%20with%20a%20kitchen%20towel%20and%20let%20cool%20until%20handleable.%20One%20by%20one,%20clean%20the%20chiles:%20Cut%20off%20the%20stem-end,%20slit%20down%20the%20side%20from%20seed%20pod%20to%20point,%20and%20open%20out%20flat.%20Gently%20scrape%20out%20the%20seeds%20and%20discard.%20Flip%20the%20chile%20over%20and,%20scrape%20off%20the%20blistered%20skin.%20Cut%20the%20cleaned%20chile%20flesh%20into%201/2-inch%20slices.%3C/p%3E%3Cp%3EIn%20a%20large%20(7-quart)%20Dutch%20oven,%20heat%20the%20oil%20over%20medium-high.%20Brown%20the%20pork%20on%20all%20sides%E2%80%94it%E2%80%99ll%20take%20about%208%20minutes%E2%80%94then%20remove%20it%20to%20a%20plate.%20Add%20the%20white%20onion%20to%20the%20pan%20and%20cook%20until%20richly%20browned,%20about%208%20minutes.%20Scrape%20it%20into%20a%20bow;%20set%20the%20pan%20aside.%3C/p%3E%3Cp%3EHeat%20the%20oven%20to%20325%20degrees.%20If%20a%20strip%20of%20the%20hard%20central%20rib%20is%20still%20attached%20to%20one%20side%20of%20the%20banana%20leaf,%20cut%20it%20off%20with%20scissors.%20Then%20use%20the%20leaf%20to%20line%20the%20unwashed%20Dutch%20oven%20(it%20will%20spill%20over%20the%20sides).%20Lay%20in%20the%20pork.%20Strew%20the%20onions%20over%20the%20pork,%20followed%20by%20chile%20strips%20and%20plantain.%20Drizzle%20everything%20with%20the%20piloncillo%20water.%20Fold%20the%20ends%20of%20the%20leaf%20in%20to%20cover%20the%20whole%20affair,%20secure%20the%20lid%20and%20bake%20until%20the%20pork%20is%20fork%20tender,%201%201/2%20to%202%20hours.%3C/p%3E%3Cp%3ELine%20a%20warm%20serving%20platter%20with%20a%20fresh%20banana%20leaf.%20With%20the%20aid%20of%20two%20spatulas,%20transfer%20the%20pork%20to%20the%20platter.%20Use%20a%20pair%20of%20tongs%20to%20break%20it%20into%20small%20chunks.%3C/p%3E%3Cp%3ERemove%20the%20banana%20leaves%20from%20the%20pan,%20scraping%20any%20clinging%20goodness%20back%20into%20the%20pan.%20If%20there%20is%20a%20lot%20of%20fat%20on%20top%20of%20the%20juices,%20spoon%20it%20off.%20Taste%20the%20juices%20and%20season%20highly%20with%20salt.%20Spoon%20everything%20in%20the%20pan%20over%20the%20pork.%20Garnish%20with%20red%20onion%20rings%20and%20lime%20wedges,%20and%20carry%20to%20the%20table,%20along%20with%20plenty%20of%20warm%20tortillas%20for%20making%20very%20delicious%20tacos.%3C/p%3E){kind=link}
