%20and%20asked%20if%20I%20would%20like%20to%20participate%20in%20the%20Le%20Creuset%20Cast%20Iron%20Challenge.%20%20Of%20course%20I%20jumped%20at%20the%20chance.%20%20I%20just%20love%20Le%20Creuset%20cookware,%20and%20I%20love%20a%20challenge!%20%20Win/win!%3C/p%3E%3Cp%3EMy%20gift%20for%20participating,%20a%2020cm%20round%20Le%20Creuset%20Casserole%20Dish%20in%20my%20favourite%20colour%20Cerise!%20%20Just%20call%20me%20a%20happy%20camper.%20%20Beginning%20May%2013th,%20people%20will%20be%20able%20to%20vote%20for%20my%20recipe%20via%20this%20link%20on%20the%20McArthurGlen%20website!%20%20Here%20is%20the%20link!%20%20The%20winner%20of%20the%20challenge%20will%20win%20%C2%A3250%20gift%20voucher%20for%20Le%20Creuset%20products,%20and%20each%20vote%20via%20twitter%20will%20be%20put%20into%20a%20draw%20for%20a%20%C2%A350%20gift%20voucher.%3C/p%3E%3Cp%3EThe%20recipe%20I%20have%20developed%20for%20this%20challenge%20is%20Pot%20Roasted%20Loin%20of%20Pork%20with%20a%20Prune,%20Apricot%20and%20Ginger%20Stuffing.%20%20I%20have%20been%20doing%20a%20Prune%20Stuffed%20Loin%20of%20Pork%20for%20years,%20which%20is%20very%20flavourful,%20easy%20to%20do,%20and%20impressive.%20%20%20I%20have%20updated%20it%20a%20bit%20for%20this%20challenge.%3C/p%3E%3Cp%3EFirst%20of%20all%20I%20decided%20to%20remove%20the%20rind%20from%20the%20roast.%20%20I%20then%20butterflied%20it,%20which%20is%20very%20easy%20to%20do.%20%20I%20give%20some%20very%20precise%20instructions%20in%20the%20recipe.%3C/p%3E%3Cp%3EI%20adapted%20my%20stuffing%20to%20include%20not%20only%20prunes,%20but%20dried%20apricots,%20some%20garlic,%20ginger%20root%20and%20thyme,%20all%20of%20which%20bring%20out%20and%20enhance%20the%20flavour%20of%20pork%20beautifully%20and%20add%20a%20wonderful%20moistness.%20%20As%20pork%20loin%20is%20a%20very%20lean%20meat%20this%20is%20important.%3C/p%3E%3Cp%3EI%20spread%20the%20stuffing%20over%20the%20cut%20surface%20of%20the%20pork%20and%20then%20rolled%20it%20up.%20%20Not%20too%20tightly%20as%20you%20want%20to%20leave%20a%20bit%20of%20room%20for%20expansion%20and%20you%20don't%20want%20the%20stuffing%20to%20leak%20out.%20%20Then%20I%20tied%20it%20with%20bakers%20twine%20to%20hold%20it%20all%20together.%3C/p%3E%3Cp%3EI%20then%20created%20a%20lovely%20rub,%20using%20%20powdered%20ginger,%20fine%20sea%20salt,%20black%20pepper%20and%20thyme%20which%20I%20rubbed%20all%20over%20the%20surface%20of%20the%20meat.%20%20Don't%20forget%20the%20ends!%20%20They%20benefit%20from%20the%20rub%20as%20well.%3C/p%3E%3Cp%3EI%20place%20the%20stuffed%20and%20rubbed%20pork%20loin%20on%20a%20bed%20of%20sliced%20onion%20in%20the%20casserole%20dish,%20added%20some%20beef%20stock,%20covered%20it%20and%20then%20roasted%20it%20for%20about%20half%20an%20hour.%20%20I%20then%20removed%20the%20lid%20and%20roasted%20it%20for%20a%20bit%20longer,%20%20about%2045%20minutes%20for%20a%20two%20pound%20pork%20loin.%3C/p%3E%3Cp%3EThe%20end%20result%20was%20a%20perfectly%20cooked%20pork%20loin,%20filled%20with%20fabulous%20flavours,%20and%20presenting%20beautifully%20.%20.%20.%20you%20have%20a%20ring%20of%20succulent,%20moist%20pork,%20long%20with%20a%20beautifully%20bejewelled%20ring%20of%20delicious%20fruity%20stuffing.%20%20The%20drippings%20were%20used%20to%20make%20a%20tasty%20gravy/sauce%20to%20go%20along%20with%20the%20meat.%20%20(Again%20very%20easily%20cooked%20in%20the%20casserole%20dish.%20%20That's%20what%20I%20love%20about%20Le%20Creuset%20.%20.%20.%20Stove%20top%20to%20oven,%20and%20vice%20versa!)%3C/p%3E%3Cp%3EI%20served%20it%20along%20with%20some%20steamed%20new%20potatoes%20(Jersey%20Royals%20are%20in%20season%20now),%20along%20with%20some%20oven%20roasted%20carrots,%20parsnips,%20swede%20and%20sweet%20potato.%20%20Yumm!!%3C/p%3E%3Cp%3EI%20think%20you%20will%20agree%20that%20this%20is%20a%20meal%20that%20would%20be%20fit%20for%20serving%20to%20company.%20%20It's%20so%20easy%20to%20make,%20and%20quick%20to%20put%20together,%20and%20the%20best%20thing%20about%20that%20is%20the%20presentation%20is%20so%20beautiful%20they%20will%20think%20you%20slaved%20all%20day%20over%20a%20hot%20stove%20to%20do%20it.%20%20They%20don't%20need%20to%20know%20you%20didn't.%20;-)%20It%20can%20be%20our%20little%20secret.%3C/p%3E%3Cp%3E*Pot%20Roasted%20Loin%20of%20Pork%20with%20a%20Prune,%20Apricot%20and%20Ginger%20Stuffing*%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3EDelicious%20loin%20of%20pork,%20butterflied,%20%20stuffed%20with%20a%20savory%20fruited%20stuffing,%20rolled%20and%20roasted.%20%20Tender,%20delicious%20and%20filled%20with%20flavor.%20%20%20This%20is%20not%20so%20hard%20to%20do%20as%20you%20would%20think.%20%20Soon%20to%20become%20a%20family%20favourite.%3C/p%3E%3Cp%3ESomething%20deliciously%20different%20for%20the%20Sunday%20Lunch%20crowd!%3C/p%3E%3Cp%3EThe%20first%20thing%20you%20will%20have%20to%20do%20is%20to%20butterfly%20the%20pork.%20%20This%20is%20very%20easy%20to%20do.%20%20%20Remove%20any%20of%20the%20string%20which%20it%20has%20been%20tied%20with%20and%20discard.%20%20%20Carefully,%20using%20a%20sharp%20knife,%20remove%20any%20crackling%20rind%20and%20discard.%20%20Working%20very%20carefully%20begin%20cutting%20through%20one%20side%20of%20the%20loin%20about%201%20inch%20down%20and%20working%20from%20right%20to%20left,%20almost%20all%20the%20way%20to%20the%20other%20side,%20stopping%20about%20an%20inch%20from%20that%20edge.%20%20Turn%20the%20meat%20around%20and%20cut%20down%20about%201%20inch%20and%20then%20begin%20cutting%20back%20to%20the%20side%20you%20started%20at,%20again%20stopping%20about%20an%20inch%20from%20the%20edge.%20%20You%20should%20now%20be%20able%20to%20open%20it%20up%20flat.%20%20Open%20it%20flat%20and%20sprinkle%20it%20lightly%20with%20some%20salt%20and%20pepper.%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20ingredients%20together%20for%20the%20stuffing.%20%20Spread%20it%20out%20evenly%20over%20the%20cut%20surface%20of%20the%20meat.%20%20Roll%20it%20up%20tightly%20and%20then%20tie%20it%20at%20even%20intervals%20with%20some%20butchers%20twine%20to%20hold%20it%20together.%20%20Don't%20tie%20it%20too%20tightly.%3C/p%3E%3Cp%3EMix%20together%20all%20of%20the%20ingredients%20for%20the%20rub.%20%20%20Rub%20mixture%20all%20over%20the%20pork,%20remembering%20the%20ends.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20%20%20Have%20ready%20a%20large%20flameproof%20casserole%20dish.%20%20Place%20the%20sliced%20onion%20in%20the%20bottom%20of%20the%20casserole.%20%20%20Place%20the%20stuffed%20pork%20roll%20on%20top.%20%20Pour%20the%20beef%20stock%20into%20the%20casserole%20dish.%20%20Cover%20with%20the%20lid.%20%20Roast%20in%20the%20heated%20oven%20for%2030%20minutes.%20%20%20Remove%20the%20cover.%20%20Return%20the%20casserole%20to%20the%20oven%20and%20roast,%20uncovered%20for%20an%20additional%2035%20to%2040.%20minutes.%20%20The%20roast%20should%20by%20that%20time%20be%20cooked%20through%20and%20nicely%20colored.%20%20Remove%20the%20roast%20from%20the%20pan%20and%20set%20aside%20on%20a%20plate%20to%20rest.%20%20Cover%20lightly%20with%20foil%20and%20keep%20warm.%3C/p%3E%3Cp%3EPlace%20the%20casserole%20on%20top%20of%20the%20stove%20and%20add%20the%20white%20wine.%20%20%20Bring%20to%20the%20boil%20and%20boil%20for%20about%205%20minutes,%20%20Reduce%20to%20a%20simmer.%20%20%20Whisk%20in%20the%20flour%20and%20ginger,%20working%20quickly%20and%20whisking%20constantly%20to%20help%20prevent%20lumps.%20Taste%20and%20adjust%20seasoning%20as%20necessary.%20%20Strain%20into%20a%20gravy%20boat.%3C/p%3E%3Cp%3ERemove%20the%20butchers%20twine%20from%20the%20pork%20and%20cut%20into%20slices%20to%20serve.%20%20Pass%20the%20gravy%20at%20the%20table.%20%20I%20like%20to%20serve%20this%20with%20some%20boiled%20new%20potatoes%20and%20roasted%20root%20vegetables.%20%20Delicious!%3C/p%3E){kind=link}
