%20love%20it,%20once%20you%20get%20it%20going%20it's%20not%20time-consuming,%20and%20there%20will%20likely%20be%20leftovers.%3C/p%3E%3Cp%3EThat's%20a%20good%20thing.%3C/p%3E%3Cp%3EYou%20can%20have%20leftovers%20of%20the%20actual%20roast%20the%20following%20day,%20or%20you%20can%20shred%20the%20meat%20in%20your%20food%20processor%20and%20make%20roast%20beef%20sandwiches.%3C/p%3E%3Cp%3EThere%20are%20several%20ways%20to%20roast%20a%20roast.%3C/p%3E%3Cp%3EBy%20first%20%22searing%22%20it%20on%20the%20stove%20top%20in%20a%20Dutch%20Oven%20or%20large%20skillet,%20then%20transferring%20it%20to%20the%20oven,%3C/p%3E%3Cp%3EBy%20%22roasting%22%20it%20at%20a%20high%20oven%20temperature%20for%20about%2020%20minutes%20then%20turning%20down%20the%20heat%20for%20the%20remaining%20cook%20time,%20and%3C/p%3E%3Cp%3EThe%20recipe%20that%20follows%20is%20the%20Dutch%20Oven/skillet%20method.%20%20It's%20my%20personal%20favorite.%20%20%20But%20I'm%20including%20links%20for%20the%20other%20approaches,%20too,%20just%20because%20I%20love%20you.%3C/p%3E%3Cp%3ELet%20me%20begin%20discussion%20of%20this%20method%20with%20a%20warning.%3C/p%3E%3Cp%3EI%20have%20only%20burned%20myself%20a%20few%20times%20in%20the%20kitchen.%3C/p%3E%3Cp%3EOne%20of%20those%20times%20was%20when%20I%20was%20searing%20a%20roast.%20%20The%20hot%20oil%20splatters.%20%20Wear%20long%20sleeves%20(and%20an%20apron,%20if%20you%20have%20one,%20to%20protect%20your%20clothes).%20%20I%20also%20use%20the%20pot%20lid%20as%20a%20shield.%3C/p%3E%3Cp%3EHeat%20up%20the%20oil%20in%20the%20Dutch%20Oven%20(or%20skillet).%3C/p%3E%3Cp%3ESeason%20the%20roast%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E(Don't%20do%20this%20until%20right%20before%20you%20begin%20to%20cook%20it%3C/p%3E%3Cp%3Eor%20the%20salt%20will%20pull%20the%20moisture%20out%20of%20the%20meat.)%3C/p%3E%3Cp%3ECarefully%20(!)%20lower%20the%20roast%20into%20the%20oil.%3C/p%3E%3Cp%3EOver%20medium-high%20heat,%20brown%20meat%20on%20all%20sides,%20about%205%20minutes%20on%20each%20side.%3C/p%3E%3Cp%3ECut%20up%20the%20veggies.%3C/p%3E%3Cp%3EI%20used%20carrots,%20onions,%20parsnips%20and%20potatoes.%3C/p%3E%3Cp%3EThe%20meat%20is%20still%20browning.%3C/p%3E%3Cp%3ESee%20all%20of%20that%20delicious%20%22residue%22%20in%20the%20bottom%20of%20the%20pot?%3C/p%3E%3Cp%3EIt%20is%20responsible%20for%20the%20awesomeness%20of%20the%20roast's%20flavor.%3C/p%3E%3Cp%3ENow%20we're%20going%20to%20start%20adding%20some%20liquid%20to%20the%20pot.%3C/p%3E%3Cp%3EYou'll%20need%20some%20beef%20broth.%3C/p%3E%3Cp%3EI%20love%20this%20stuff.%3C/p%3E%3Cp%3EI%20think%20it's%20the%20next%20best%20thing%20to%20homemade%20beef%20stock.%3C/p%3E%3Cp%3EAdd%20about%202%20cups.%3C/p%3E%3Cp%3E(Watch%20out%20for%20the%20sputtering%20juices.)%3C/p%3E%3Cp%3EGrab%20your%20measuring%20cup.%3C/p%3E%3Cp%3EAdd%20about%201/2%20cup%20of%20red%20wine.%3C/p%3E%3Cp%3EThis%20is%20optional,%20but%20it%20creates%20a%20beautiful%20depth%20of%20flavor.%3C/p%3E%3Cp%3ERoughly%20mince%20about%204%20cloves%20of%20garlic.%3C/p%3E%3Cp%3E(That's%204%20teaspoons%20if%20you%20want%20to%20use%20the%20very%20convenient%20pre-minced%20stuff.)%3C/p%3E%3Cp%3EAdd%20it%20to%20the%20pan.%3C/p%3E%3Cp%3EOh%20my%20goodness.%3C/p%3E%3Cp%3EThis%20smells%20so%20good.%3C/p%3E%3Cp%3EAdd%20the%20onions,%3C/p%3E%3Cp%3Ebay%20leaves%20and%20thyme,%3C/p%3E%3Cp%3Eand%20two%20tablespoons%20of%20tomato%20paste.%3C/p%3E%3Cp%3EPut%20the%20roast%20in%20a%20325%20degrees%20oven%20and%20bake%20for%20several%20hours,%3C/p%3E%3Cp%3EDon't%20be%20afraid%20to%20use%20a%20meat%20thermometer.%3C/p%3E%3Cp%3EI%20bought%20mine%20for%20$5%20and%20use%20it%20all%20the%20time!%3C/p%3E%3Cp%3EIt%20saved%20me%20from%20over-cooking%20this%20roast.%3C/p%3E%3Cp%3E(rare,%20medium,%20well-done,%20etc.).%3C/p%3E%3Cp%3E(I%20baked%20mine%20for%20about%20an%20hour%20and%20a%20half.)%3C/p%3E%3Cp%3EThen%20pull%20it%20out%20and%20add%20in%20the%20rest%20of%20the%20vegetables.%3C/p%3E%3Cp%3EBake%20for%20another%20hour%20until%20veggies%20are%20tender.%3C/p%3E%3Cp%3EMmmmm...%3C/p%3E%3Cp%3ELeave%20the%20knives%20in%20the%20drawer!%3C/p%3E%3Cp%3EThis%20is%20fork-tender%20perfection.%3C/p%3E%3Cp%3EUse%20the%20leftovers%20to%20make%20a%20roast%20beef%20sandwich!%3C/p%3E%3Cp%3EPot%20Roast%3C/p%3E%3Cp%3EServes%208%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20325%20degrees.%20In%20a%20Dutch%20oven,%20heat%20oil%20over%20medium-high%20heat.%20Sprinkle%20roast%20all%20over%20with%201%20teaspoon%20salt%20and%201/2%20teaspoon%20pepper.%20Place%20in%20pan,%20and%20brown%20on%20all%20sides,%20about%2010%20minutes.%3C/p%3E%3Cp%3E2.%20%20Turn%20meat%20fat%20side%20up.%20Add%20stock,%20wine,%20if%20using,%20onions,%20garlic,%20bay%20leaves,%20and%20thyme.%20Stir%20in%20tomato%20paste.%20Bring%20to%20a%20simmer,%20cover;%20put%20in%20the%20oven,%20and%20roast%20for%202-3%20hours%20(check%20temperature%20for%20doneness).%20Add%20carrots%20and%20potatoes,%20and%20cook%20until%20vegetables%20are%20tender,%20about%201%20hour%20more.%3C/p%3E%3Cp%3E3.%20%20Transfer%20the%20r
