  • 1 1/2 c. black beans
  • 6 c. cool water
  • 3/4 teaspoon salt
  • 2 teaspoon cider vinegar
  • 3/4 c. minced onion
  • 1 med. green pepper, diced
  • 1/2 c. minced celery
  • 1 med. potato, diced
  • 1 linguinica sausage, minced
  • 8 ounce. tomato paste
  • 3 cloves garlic, chopped
  • 2 c. water
  • 3 beef bouillon cubes
  • 3/4 teaspoon cumin
  • 1/2 teaspoon pepper
  • Dash of cayenne pepper

Инструкции

  1. In a large kettle combine beans, cool water, salt and vinegar. Bring to boil; lower heat and cook gently, uncovered, about 45 min. Add in remaining ingredients, bring to boil, reduce to simmer and cook partially covered 1 hour or possibly till beans are tender, stirring occasionally. Serves 4-6.
