- Peel and core apples, and chop into small chunks.
- Heat butter in a small pan, add in apple and sage leaves, and cook very gently, covered, till apples are soft, stirring from time to time. Using a whisk, stir in lemon juice, nutmeg and salt, breaking up the apples into a mush.
- Heat oil and gently fry crumbed pork chops till golden brown on both sides. Serve with sage and apple sauce and a couple of extra sage leaves.
