  • 2 Tbsp. Vegetable Oil
  • 1 tsp Salt
  • 2 c. Tomatoes, Minced, 2 Medium
  • 6 x Pork Loin Or possibly Rib Chops, *
  • 1/4 tsp Pepper
  •     Warm Cooked Rice
  • 2 c. Radishes, Thinly Sliced
  • 3 Tbsp. Orange Juice
  • 2 Tbsp. Fresh Cilantro, Snipped Fine
  • 1/4 tsp Salt
  • 1/2 c. Onion, Minced, 1 Medium
  • 2 Tbsp. Lime Juice
  • 2 Tbsp. Vegetable Oil
  • 1/4 tsp Pepper, Freshly Grnd

  1. Pork Chops should be about 1/2-inch thick.
  2. Prepare Radish and Cilantro Relish and set aside. Heat oil in a 10-inch skillet till warm. Cook pork chops in oil over medium heat till brown; sprinkle with salt and pepper. Remove pork from the skillet. Cook and stir relish and tomatoes in the same skillet for 5 min. Add in pork chops and heat to boiling; then reduce the heat. Cover and simmer till pork is done, about 45 min. Serve with rice. Garnish with the snipped fresh cilantro if you like.
  3. RADISH AND CILANTRO RELISH:Mix all ingredients in a glass or possibly plastic bowl. Cover and chill at least 1 hour.
