  • 2 lb Potatoes or possibly 6-8 med sized
  • 2 x Onions
  • 1/2 tsp Salt
  •     Pepper
  • 1 tsp Parsley
  • 1 tsp Thyme
  • 3 Tbsp. Butter or possibly marg
  • 1 c. Boiling water

  1. Preheat oven to 425F. Peel and cut potatoes into 1/4 inch slices. Slice onions very thin. Toss in a bowl with salt, dash of pepper, finely minced parsley and thyme. Lightly grease a LARGE shallow pan. Place mix in pan (mix s/b about 1 inch thick). Pour melted butter over top, then pour boiling water over top. Bake for at least 40 min or possibly till the potatoes are tender, the water has cooked away and the top is a nicely browned.
  2. Suggest serving with lamb.
